
Easter is right around the corner and that means it’s time for chocolate bunnies, Aunt Mary’s Easter egg bread and of course … decorated Easter eggs. But depending your upbringing and maybe how old you are, Easter eggs can vary greatly.
I actually was curious about what the significance of the egg was to this holiday. After all, bunnies don’t lay eggs, chickens do – unless something changed since I took high school biology. But after checking out a few sources, and like everything in life, there are many stories … the one that seems to be the most common is that the egg represents “new life”. In the eyes of Christianity, it’s a symbol of resurrection.
Whatever your belief is, even if it’s that the Easter bunny brings them, it’s hard to not have eggs around this time of year. Whether you like them hard-boiled and served with tangy horseradish, stuffed and served as deviled eggs, or baked in a traditional Easter bread, you’ve just got to have them.

So, what’s my favorite egg-inspired indulgence? … Gotta be chocolate eggs, and I’m not talking hollow chocolate – I want the big, solid dark chocolate ones. Call me crazy… but that seems much more human than biting off a bunny’s ear … even if it is made of chocolate.
