Hello to Mr. Food’s followers. I’m Patti, blogger at Worth The Whisk. My goal with any recipe is that it needs to be fairly foolproof – but even more important, frugal! And for that reason, I do love beans. Mr. Food asked me to whip up something for his readers for March…and that’s how White Bean & Cilantro on Endive Appetizers came to be.
Not sure about endive? It’s just a little fancier than celery or lettuce, has a bit of a bite in flavor and makes an excellent scoop!
March was once a quiet month for celebrations, but we Americans seem to always want to party, so between St. Patrick’s Day, March Madness and Mardi Gras, there is merrymaking on the horizon somewhere. Pull out the blender and (aside from the margaritas), impress some folks with this appetizer that is surprisingly light, obviously healthy and delivers for any GREEN themed party.
