I think of all of those things as well, but around here at the Mr. Food office, I am reminded of a trip that Mr. Food  and Howard, his right-hand man, took to Ireland a couple of years ago. They brought back plenty of photos, videos and some amazing recipes from the areas they visited.

In honor of St. Patrick’s Day, I am going to share some of the videos with you that they shot. (Just click the links to see the recipes and corresponding video.) They all have spectacular views of Ireland, along with mouth-watering recipes from the regions. Perhaps they will inspire you to cook something other than the usual this St. Patrick’s Day in your home.

Menu in a Minute: Quick Guide to St. Patrick’s Day

Thursday, March 17th, 2011

By Sarah Skerrett, Mr. Food Editor

If you’ve waited until today to plan your St. Patrick’s Day meals, don’t rely on the luck of the Irish to pull together something fast – let the Mr. Food leprechauns make your menu in a minute! Whether you want to make one dish or the entire menu, it’s a great way to celebrate the very greenest day of the year.

During Mr. Food’s “A Taste of Ireland” series in 2009, Mr. Food traveled all around the Emerald Isle, meeting friends and sampling foods. Many of the recipes you find on MrFood.com are adaptations of dishes he tried in Ireland, like Beef and Guinness Casserole from Larkin’s Irish Pub in County Tipperary. His version is easy to make and tastes just like the original! But don’t take my word for it: watch Mr. Food experience an Irish Beef and Guinness Casserole on YouTube (click the green “Watch Video” button)!

Beef and Guinness Casserole is a classic Irish dish that gets its kick from Guinness beer. The thick sauce and tender beef combine with chunks of vegetables for a rich, hearty stew. The best part about this dish is it cooks in one pot, freeing you (and your oven!) up to focus on other menu items.

St. Patrick’s day wouldn’t be the same without Sweet & Sour Irish Cabbage and Glazed Corned Beef, the Irish equivalent of peanut butter and jelly. Serve together alongside Champ Potatoes (a.k.a. Irish mashed potatoes), easy-to-make potatoes that have flavorful scallions in every bite.

For dessert – if there’s room! - Irish Soda Bread, Shamrock Shortbread and Irish Coffee make the perfect finish.

Celebrate St. Paddy’s Day with Irish Fare

Friday, March 11th, 2011

By Sarah Skerrett, Mr. Food Editor

An old Irish proverb says laughter is brightest where food is best. With our round-up of traditional (and nontraditional!) Irish fare on the menu, your house will be non-stop gigglefest on St. Patrick’s Day! Earlier in the week, I covered delectable “greenspired” desserts to serve on or around March 17 like Irish Milk Shakes and Irish Cream Cakes. Now, with less than a week til St. Patrick’s Day, it’s time to plan that main course menu!

I’ve got a collection of our best Irish recipes that will really put you in the holiday spirit. For me, it doesn’t seem like St. Patrick’s Day without the usual suspects like corned beef and cabbage and Irish stew. (All washed down with a few beers, of course.) Depending on how many people you’re serving and/or how quickly you want to eat, Mr. Food has different recipes to suit your needs. Some of us enjoy spending time on a multi-step recipe and others – like me! – prefer quick and easy.

Slow Cooker Corned Beef and Cabbage basically cooks itself OR, for a slightly more hands-on approach, try  Glazed Corned Beef paired with Cabbage and Caraway Seed! Wondering what to look for when purchasing corned beef at the grocery store? Check out Mr. Food’s handy guide to corned beef.

Irish Beef Stew is an easy all-in-one pan meal that features Guinness, while the Dressed Up Irish Stew is slightly fancier with lamb chops instead of stew meat. Don’t forget Boxty (authentic Irish Potato Griddle Cakes) to accompany your corned beef and Irish stew!

Dig in to St. Patrick’s Day Desserts

Monday, March 7th, 2011

By Sarah Skerrett, Mr. Food Editor

Irish food gets a bum rap. Most Americans consider “Irish cuisine” to be an oxymoron, and that every dish is salt-laden, starchy and boring. Like England, their neighbor to the southeast, Ireland’s culinary repertoire is often judged on its Americanized counterparts – pub food like corned beef sandwiches, bangers and mash, colcannon, shepherd’s pie, and boxty.

But there’s so much more than meets the eye with Irish food, and with St. Patrick’s Day rapidly approaching, it’s a great time to check out some new and different Irish recipes that maybe you’ve never seen before. To shake things up, let’s start with the sweet stuff first and dig in to St. Patrick’s Day desserts!

  • Irish Soda Bread is, and always will be, my favorite Irish treat. True, it’s not “dessert-y” like some of the other foods on our list, but there’s nothing better than fresh-from-the-oven soda bread and slathered with butter! There’s many variations but my personal fav includes golden AND dark raisins.

  • Green bagels, green cookies, green beer…everything turns green for St. Patrick’s Day. Our Minty Green Mousse makes a neat treat for kids and mint-lovers alike. Make it fancier by serving it in chocolate cups with a sprig of mint and chocolate shavings!
  • Milkshakes are a year-round delight but check out our blarney spin on an old favorite: the Irish Milk Shake with chocolate-covered milk patties. YUM. Or if you think one month a year of Shamrock Shakes at McDonald’s just isn’t enough, make your own at home anytime with this copycat Shamrock Shake recipe from our sister site, AllFreeCopycatRecipes.Irish Milk Shake RE Dig in to St. Patricks Day Desserts
  • Layered parfaits look cool and are fun to eat. I really liked the Irish Trifle recipe from Hoosier Homemade – it’s fast, easy and budget-friendly.
  • Potatoes pop up everywhere in Irish recipes, even in dessert-style dishes. I found this custard-like Irish Potato Pie on Have the Cake food blog, a great option if you don’t want to cook with beer or liquor. Not surprisingly, many Irish desserts rely heavily on those ingredients! (See below.)

If you’re like most, you want to celebrate St. Patrick’s Day in true Irish fashion, i.e. with a pint or other alcoholic beverage! So I’ve gathered several recipes that include liqueur or beer, ranging from ice cream to brownies.

  • For a sweet cake with an even sweeter glaze, do not forget to bring  our Irish Cream Cake to your St. Patrick’s Day shindig! It serves 12 and gets a great kick from your favorite Irish cream liqueur.
  • Similarly, these “boozy” Irish Cream Brownies, courtesy of Baking Bites, also feature cream liqueur, which is mixed in with the batter to infuse it with flavor. The delectable Bailey’s Irish Cream Mousse Pie on the Saving Room for Dessert blog features Ghirardelli white chocolate and a graham cracker crust. The picture alone is to die for!
  • Finally, there’s a truly unique Irish dessert for those adventurous cooks who like a challenge. Beer pops up in many unusual places but how about about ice cream? Chocolate Stout Ice Cream, courtesy of The Pink Apron blog, was adapted from a David Lebovitz recipe. While the stout/ice cream combo may sound strange, it’s the same principle that propels the Guinness Milkshake. Not a beer fan? The chocolate helps balance the flavor of the stout so the result is a sweet (but not too sweet) and creamy delight!

Stay tuned for future posts covering popular St. Patrick’s Day favorites like corned beef, Irish stew, and more! Do you have any Irish recipes you make every year? Let us know!
