Fall is my absolute favorite time of year. I love watching the leaves change color, grabbing my favorite light jacket and taking a stroll around the block, and finding the crunchiest leaves to step on. Plus, with this heat wave we’ve experienced all summer, I’m more than ready for this humidity to finally go away.

I’m sure all of you are ready for weather worthy of snuggling under a blanket and warming up by a fire with a stick and a bag full of marshmallows. The first snowfall of the year is always quite pretty, and it can be fun to snuggle up in your favorite sweater with a cup of hot cocoa. Those warm, cozy feelings, however, last about two weeks before I’m fed up with the bitter cold, scraping off my car, and being forced to stay indoors.

That’s why I’m so pleased that spring decided to pop in a little earlier than usual. I’ve been waiting for weeks to break out my fun summer outfits and spend all day outside — I bet you have too! Spring weather means spending more time taking walks and visiting friends which means less time in the kitchen. We don’t want you to miss out on these lovely spring days which is why we’ve got the secret to tasty food on-the-go: muffins. Ladies and gents, I present to you a new craze March Muffin Madness.

Baking muffins is your answer to fresh food when you’re on the move. Whip up a batch, and you’ve got a snack or breakfast option that will last for days. Throw a couple into a plastic bag, and bring them with you to munch on when your stomach starts to rumble as you spend a day downtown with your friends.

Speaking of the new year, it’s about time you checked in on your New Year’s Resolutions.

Every year, my resolutions stay strong for about three weeks. That’s followed by about a week of guilt, and by the time February rolls around, I’ve determined that I’m too busy right now to follow through. I’ll get around to it all once life slows down. It’s funny how that magic window of time never quite appears. Spring pops up, and I still haven’t started to eat healthier, take more pictures, get in touch with old friends, or take up a new hobby. Does any of this sound familiar?

That’s why March is the perfect time for a resolution renewal–New Year’s 2.0, if you will. Take those nutritional goals you and your friends toasted over, dust them off, and head out again for round two. We’re here to help!

Passing the Entertaining Torch

I love entertaining for all sorts of occasions. Whether it’s the holidays or for any family event, I really enjoy going all out and coming up with great dishes to serve, and presenting them in interesting ways.

I’ve learned a lot of great presentation tips since working here at Mr. Food, and I’ve come up with lots of my own ideas, too. But time passes, and when I started here many years ago, my daughter was in high school. Now she is married and, between her desire to entertain and many in my son-in-law’s large family also wanting to take a turn at the fun, it’s time for me to pass the entertaining torch.

I will miss hosting the big crowd this year, but everyone deserves a turn at being the host or hostess! And I have to admit that it’s also nice to be a guest and not have all the shopping, cooking and cleanup that comes with hosting holiday feasts. I am always happy to bring something along, and some of my favorite bring-alongs are desserts. I really enjoy making and decorating cupcakes and other baked goods, like that Cookies ‘n’ Cream Cheesecake I told you about a while back. I’m also always called upon to try to replicate my Mom’s famous brisket, and if a main dish is asked for, I have a “from-scratch” Italian-style lasagna recipe that takes a lot of time to make but, believe me, it’s worth it.

All these dishes are pretty portable, so no matter how far we have to drive, they can pretty well get there in one piece. I always use a cooler when necessary, and make sure everything is safely wrapped and packed so I don’t arrive with a mess. This way, no matter the occasion, I still feel like I contributed some of my cooking skills to the festivities…and that makes me happy.

I have a confession to make: I hate packing school lunches every day. Once a week, I allow my 10-year-old son to buy lunch at school. Even on those days, I still have to pack snacks. If I let my son do it, his lunch bag would be full of chips, sweets and juice. That’s okay in moderation, but not all the time.

I wish I could tell you that my son loves to eat every kind of fruit under the sun – but he doesn’t. As he has gotten older, he’s become a picky eater. Some of that may also have to do with what snacks are considered “cool.”

The lunch staples are typically turkey or cream cheese and jelly sandwiches, and some days I can even sneak in leftovers if I think he’s feeling adventurous.

A couple of popular recipes for the kids’ lunchboxes are Mr. Food’s Peanut Butter and Banana Wrap and Mr. Food’s BLT Rollups.

I also stumbled on a very informative website that has given me some great ideas for the lunchbox dilemma. It’s http://weelicious.com. Idea-sharing with my friends is a terrific resource, as well; other moms have tricks I’ve never thought of to keep lunch-trading to a minimum.

No matter what type of sandwich or snack ends up in his lunchbox, I try to always include a note that tells my son how much I love him and to have a good day. Maybe that won’t fill up his tummy, but I know it will nourish his soul.

Easy Mr. Food recipe for Sweet-and-Sour Wings, perfect for game-watching parties!

So, I put my husband’s wants before mine and purchased Direct TV’s “NFL Sunday Ticket” package as a birthday gift for him. I don’t know if you’re familiar with it, but basically he and our son can now watch EVERY NFL game that is broadcast. EVERY GAME. EVERY SUNDAY. Well, for the last two Sundays, both my husband and my son have been glued to the TV for the whole afternoon and night. And, we’ve had various guest “couch potatoes” each week, too.

If you have your own couch potato, you know that they are hungry animals. Something about cheering or booing those teams gives them hearty appetites! I always put out an assortment of chips & salsa, cheese & crackers and hummus, but I also like to give them something more substantial. (That way, they won’t have to order in pizza!)

Last week, I made Mr. Food’s recipe for Sweet-and-Sour Wings and they were a huge hit! (I liked the recipe because there were only 4 ingredients!) They were sweet and tangy, and sticky and crunchy. Yum! I also made a Stuffed Deli Sandwich which was so easy to make ahead and leave for them to devour.

This Sunday, for dessert, I’m going to surprise them with chocolaty Game-Day Cupcakes. I tried them at work when the test kitchen made them and they really do taste as good as they look!

Cupcakes are In

It seems like cupcakes have become more and more trendy lately. Cupcake stores are popping up all over, there are a few TV shows about cupcakes, and Mr. Food recently featured Karen Tack, co-author of Hello, Cupcake! and What’s New, Cupcake?, on his show. Here I am on my recent cruise, where I took a cupcake-decorating class. It was so easy and fun!

I even got to try my hand at cupcake decorating when I recently took a class at the only cupcake shop at sea, on a cruise! It was so much fun and, to my surprise, my creations came out great! I have to admit that it was pretty easy, since the instructor took us through it step-by-step, which is what Karen and Alan do in their books.

My daughter and her friends have also been playing around with cupcakes. They love to make confetti cupcakes with sprinkles in the batter and in the icing. The other day, they became adventurous and made beautiful flower cupcakes. They were easy…just bake, cool and frost your favorite cupcakes. Snip mini marshmallows in half on the diagonal. Dip the cut part into colored sugar, and place them around the top of the cupcake like petals. They definitely look more difficult than they are!
