Fun in the Sun with Mr. Food

It’s just about summertime, and you know what that means… We’ve all got vacation on our minds. Whether we’re visiting family nearby, traveling somewhere far away, or simply having a staycation in the comfort of our very own homes, you just can’t beat a summer vacation! And as much as I like to travel to places all over the world – like Ireland, of course – sometimes you just want to relax and do a whole lotta nothin’.

That’s why I love tropical vacations. I love pretty much any island, but I’d have to say my top three choices are Jamaica, the Bahamas, and Curacao. All of these island-y places are just the best. Most of all I love the people – they’re extra-friendly, and always so happy!

I think Jamaica is such a beautiful place, and I love going to Nassau in the Bahamas because it’s just a hop, skip, and a jump away for us Floridians! Curacao is where I go when I want a little more worldly of an experience; it’s a mixture of the tropics and Europe because of the Dutch influence.

And for me, there’s no combination of flavors that takes me back to all my favorite tropical islands more than pineapple and coconut. We’ve got all kinds of “pina colada” recipes here at Mr. Food, like this colorful salad.

Whether I’m headed to the tropics or just gettin’ a taste of it at home, I know I’m in for a treat. Because in my book, anything tropical is always… “OOH IT’S SO GOOD!!”

Sunshine Salad RE Are you snowed in?

No matter what your weather is today, make it a sunny day with Mr. Food's Sunshine Salad!

Maybe you heard the news last week that there was snow on the ground in 49 states? The only state without any white stuff was Florida. (Luckily, that’s where I live, and where our Mr. Food corporate offices are!)

Chances are, most of you reading this live in one of the snow-covered states. Have you been stuck in the house a lot lately? Do you have a bad case of cabin fever or winter doldrums? Are you dreaming about the summer sun?

I want to share a couple of our recipes that will hopefully bring some sunshine into your life during this somewhat dreary time of year. So, put on some Beach Boys music, crank up the heat and try one of these easy recipes.

If you can get to a grocery store, why not make Mr. Food’s Sunshine Salad which uses in-season strawberries and oranges, but will remind you of a warm summer day?

Our Sunny Lemon Fruit Bites are sure to brighten up even the gloomiest day. (Plus, there’s very little cooking involved, so it’s a great recipe for the kids to help with!)

Take heart, Groundhog Day is only two weeks away! Let’s keep our fingers crossed that Punxsutawney Phil doesn’t see his shadow, and warmer weather isn’t too far away.

Oh, Hectic Night!

Cuban Shredded Beef RE Oh, Hectic Night!

Mr. Food's Cuban Shredded Beef is one of my family's favorite one-pot dinner recipes that I love to plan for busy nights!

Before I had a child, I thought my life was busy. I had no idea the true meaning of being busy. Then, as our son got older and started participating in sports and other after-school activities, our lives went from busy to down-right hectic. Monday and Wednesday he plays soccer, Tuesday is religious school and Thursday varies depending on the week. Did I mention I also work full time?

The weekends are for running errands, cleaning, laundry and all the other stuff there isn’t time for during the week. Unfortunately, eating dinner on Tuesday night cannot wait until I have time on the weekend. Picking up a pizza and making a Caesar Salad every now and then is fine, but not all the time. Now, throw the holidays on top of that and…yikes! Shopping and baking and company, oh my!

I figured out the key to feeding my family when life is crazy is all about planning. One of my favorites that takes very little effort is Cuban Shredded Beef. I let my slow-cooker do all the work; I don’t even have to be there. All I do is make a package of yellow rice, steam some broccoli and we’re good to go. Saucy White Chili, or any chili for that matter, is a great make-ahead. I think it’s even better the second day.

A staple in our house for weeknight dinners is pasta and meat sauce. To give something different a shot, I tried Chicken Bolognese one night and my family loved it.

It is so easy to get wrapped up in shopping, planning and entertaining at this time of year that we often lose sight of what’s important. Being with family and friends and enjoying each other is what it’s all about. It is necessary to take those mid-week breaks and sit down with your family to a home-cooked dinner rather than going to a drive-thru and eating in the car on the way to your next activity.

Cherish your children and the chaos they add to your life because, before you know it, they will be carting their own kids around! Whatever you cook, whatever you plan, I wish you a very happy holiday and enjoy, enjoy, enjoy!

Yay! We get a long weekend this week, in honor of our country’s birthday!

Not too many people refer to July 4th as Independence Day anymore, but that’s what we’re celebrating this weekend: winning our country’s independence from Britain.

And, speaking of independence, if you want to celebrate your own independence…from kitchen duty, that is, I’ve got some great July 4th recipes that are sure to make you and your family happy during this long (and, I hope, restful) weekend:

Edamame Garden Salad from Mr. Food

Do you know what edamame are? They’re green soybeans, and edamame is the Japanese word for them, pronounced ĕd-uh-mah-mā. Edamame are the only vegetable considered a complete protein, comparable to meat and eggs, and soy is often recommended as a healthy substitute for protein sources that are higher in saturated fat and cholesterol. Edamame are full of calcium, iron, zinc and many B vitamins, and may also help protect against cancer and osteoporosis. And, ladies, here’s one of the best reasons to love edamame: some studies suggest that soy can help reduce symptoms of menopause!

If you’ve never seen or eaten edamame, they’re green pods with sweet soybeans inside. They’re often on the menu as an appetizer at Japanese restaurants, and are served steamed and sprinkled with salt. You can buy them in the freezer case of the grocery store, either in the pod, or shelled. Now, just be sure you only eat the beans inside, not the actual pod! They’re a fun and yummy snack that’s actually good for you!

I’ve seen lots of kids eat edamame, including my own. My daughter especially loves them, and often takes them to school with her lunch. Edamame have become so popular with kids that companies are marketing directly to them with SpongeBob and Dora the Explorer packaging!
