If you’re not familiar with the dietary rules of the holiday, there are many foods that can’t be eaten during the eight days it lasts. Generally, some of the basics that aren’t allowed are bread, rice, wheat, rye, oats, barley, pasta, corn, peas, beans, peanuts, and foods made with these items. Observant Jews do not even keep these items in their homes during the holiday.

So what is allowed? Fruit is always a safe bet, as are potatoes and other root vegetables, leafy greens, nuts, eggs, fish, dairy and meat (although, in accordance with Kosher laws, meat and dairy must be served separately).

Typically, Passover baked goods are dry, heavy and not very appealing because you can’t use flour. A few years ago, I found a recipe for Passover Brownies that my family absolutely loves, so I’ve shared it with you below. (In fact, my kids have been known to ask me to make them at other times during the year!) They are surprisingly moist and really good!

Patty Rosenthal Welcome Spring with Brand New Menus from our Test KitchenCrabmeat Stuffed Salmon RE  1   Welcome Spring with Brand New Menus from our Test KitchenIt’s the first day of Spring and that means we’re starting to see tulips poking their colorful heads out of the ground, chocolate Easter bunnies replacing all the St. Patty’s day stuff at the store, and I – for some crazy reason – start to cook differently at home. Alright, I’ll admit it may be a bit odd, especially this year when the weather around the country all winter was ridiculously warm.

It’s just something I do. It’s sort of my way of officially welcoming spring.

So good-bye, slow cooker (that will come out again in the summer when I want to keep the kitchen cool) and hello, freshness. This Crabmeat-Stuffed Salmon, today’s TV recipe, is my new favorite go-to quick and easy meal for healthy weeknight cooking. And you can bet I’m tucking away my cobbler and crisp recipes and digging out my favorite Lemon Cheese Bars and Coconut Pecan Parfait. As a matter of fact, let me share with you a few menus that my family will be celebrating the season with in the weeks to come.

Passover begins next Monday at sundown and right about now, you’re probably on the hunt for the best Passover recipes. Food is an important symbolic element of Passover (in addition to the cleaning and the shopping!), so the meal takes center stage.
