Quick Guacamole 09 05 05 RE Endless Florida Visitors (Or...Guacamole Works for Last Minute Entertaining)

Homemade guacamole is one of the easiest last-minute entertaining dishes you can make!

If you live in Florida, the week between Christmas and New Years has to be one of the most exhausting weeks of the year. No, we don’t have to shovel snow or worry about washing the salt off our cars from the plows…but we do have to deal with all the visitors that come to the Sunshine State for winter break. Oh, when I say “deal with,” please don’t take that in a bad way.

Ya see, if you live in South Florida, you probably originally came from somewhere else. That means your friends from all over the country flock here to visit family and friends. That also means restaurants are packed, tourists with pale white skin are at the beach even though the temperatures often are only in the 40s and 50s. I think it’s nature’s way of saying to all the visitors…”Don’t move here, the weather isn’t really that great.” And, like clockwork, the week after New Years, the temperatures go back to the mid 70s.

Anyway, the reason this week is so exhausting is that almost every day “we Floridians,” who, by the way, are not on vacation, get calls from our friends at the last minute and want to get together. “How about lunch or dinner or stopping by for a drink?” Sure, it sounds great but if you accept all the offers and still have to get up in the morning…let me tell  you, you really begin to drag.

The other night one of my college friends, Jeff, called and said we should get together. We met at his mom’s condo, where he was staying, after stopping by my assistant’s 40th Birthday bash and then visiting my stepmom in the hospital. She’s doing great, but that’s another story. So, at 9:30 pm, we finally got together. Well, we got there and it was like old times…plus, his mom couldn’t have been more gracious.

After the hugs and tour of her new kitchen, we were offered…wine, coffee, tea. My wife Patty, who, by the way, is the director of the Mr. Food Test Kitchens, and I sat down on the couch. We were then offered a platter of cut fruit, homemade guacamole and sinfully good honey cake. My friend’s mom was so proud that she had whipped up the guacamole in minutes from a couple of over-ripe avocados that were sitting on her counter. She said it was her first time and asked us what we thought. We tasted it and it was…very lemony. Like, pucker-up-and-kiss-me lemony. We said it was good but knew it wasn’t the best guacamole we ever had. Maybe it was the fact that our lips were still in the puckered-up position 10 minutes after our first dip. So then she asked us how she can make it better the next time. Let me tell you that, even though my wife and I eat, live and breathe food, we never criticize food when someone is being gracious to us.

She insisted, so we gave her some pointers and shared with her that she could find several versions of homemade guacamole at MrFood.com. Over time, we’ve found that it’s much more empowering to direct our friends to our website versus telling them how to make something when they call and ask us. It’s like the old story that it’s better to teach someone to fish rather than giving them fish. This way, they’ll never go hungry.

Well, a platter of fruit, a bowl of guacamole and a few slices of honey cake later, and it was already after 11 pm and we had a 30-minute drive home. Tired? Yes. Glad we saw our friends? Yes. And, knowing Jeff’s mom, she probably headed right to the market the next morning in search of a few very ripe avocados so she’s ready for the next time she has company.

As for us, even though New Years is over, 2 more friends to meet with tonight and relatives coming in this weekend, maybe I’ll pick up some avocados, too. Enjoy our guacamole!

Polka Dot Cookies RE Edible Gifts from Your Own Kitchen

Polka Dot Cookies from Mr. Food are a fun twist on traditional chocolate chip cookies, and they make a great holiday gift!

When my kids were younger and each had only one teacher, I used to spend time shopping for that just-right gift for the holidays. Now that they’re both in high school, and each has 7 teachers, plus the dance teacher, plus the college advisor, plus friends who they want to give a little gift to, there’s just no way I have the time (or the money) to shop for something special for each person.

A few years ago, I started making edible gifts. A dozen cookies in a pretty holiday-themed container (there are some really cute Chinese take-out shaped boxes) makes a great teacher gift. I really like to use the Polka Dot Cookies recipe here on the Mr. Food site. They only use 4 ingredients, and being a chocolate cookie with white chocolate chips, they’re a nice change from your typical chocolate chip cookie.

Last year, my daughter helped me make Chocolate-Dipped Pretzels to give to her friends. We had fun shopping for different decorations. We used white chocolate and light blue decorating sugar for her friends who celebrate Hanukkah, and milk chocolate with a red and green candy drizzle for those who celebrate Christmas. The ways to decorate these are endless! How about crushing up candy canes and rolling the dipped pretzels in those? We found really cute holiday-themed cellophane bags to put them in, and tied them with pretty ribbons. It was fun, and much less expensive than buying all those gifts!

Need a hostess gift for a party? Why not try Chocolate Wreath Fudge? You can buy an inexpensive plastic holiday-themed platter to put the fudge wreath on, and give it as part of the gift. Or how about baking up some quick-breads, like Chocolate Chip Cranberry Bread? Homemade breads are very holiday-festive wrapped in pretty cellophane.

Passing the Entertaining Torch

I love entertaining for all sorts of occasions. Whether it’s the holidays or for any family event, I really enjoy going all out and coming up with great dishes to serve, and presenting them in interesting ways.

I’ve learned a lot of great presentation tips since working here at Mr. Food, and I’ve come up with lots of my own ideas, too. But time passes, and when I started here many years ago, my daughter was in high school. Now she is married and, between her desire to entertain and many in my son-in-law’s large family also wanting to take a turn at the fun, it’s time for me to pass the entertaining torch.

I will miss hosting the big crowd this year, but everyone deserves a turn at being the host or hostess! And I have to admit that it’s also nice to be a guest and not have all the shopping, cooking and cleanup that comes with hosting holiday feasts. I am always happy to bring something along, and some of my favorite bring-alongs are desserts. I really enjoy making and decorating cupcakes and other baked goods, like that Cookies ‘n’ Cream Cheesecake I told you about a while back. I’m also always called upon to try to replicate my Mom’s famous brisket, and if a main dish is asked for, I have a “from-scratch” Italian-style lasagna recipe that takes a lot of time to make but, believe me, it’s worth it.

All these dishes are pretty portable, so no matter how far we have to drive, they can pretty well get there in one piece. I always use a cooler when necessary, and make sure everything is safely wrapped and packed so I don’t arrive with a mess. This way, no matter the occasion, I still feel like I contributed some of my cooking skills to the festivities…and that makes me happy.

I love Thanksgiving! It’s one of the holidays we host at our house and it’s by far my favorite! We’ve been hosting it for more than 20 years, and over the years I’ve collected special table linens that I like to use, and pretty decorations to make the tables festive. For Thanksgiving, the way the tables look is almost as important to me as the food. ALMOST.  

The food. Mmmm. My mouth is watering just thinking about all the yummy dishes. My menu has been almost the same since the very first year. Many of the dishes we have, I only make for Thanksgiving, so they’re really a treat. They’re our traditions. My guests look forward to the same food they’ve always had.  

A few years ago, I found a new sweet potato recipe that I wanted to try. I had been making a traditional sweet potato casserole, with the mini marshmallows on top, for years. This new recipe was for roasted sweet potato wedges, and sounded much healthier, but still sounded delicious. Well, I thought about just substituting the new recipe for the old one. I even mentioned it, in passing, to a few of my guests. Everyone’s response was “You can’t stop making the casserole!” So, that year, I decided to make both and let them choose which one they liked better. I wasn’t surprised when everyone unanimously picked the new recipe! It’s now a favorite, and a new tradition.  

Last year, I decided we needed a new green vegetable to replace the traditional green bean casserole. As I always do, I turned to the Mr. Food website and found our next new tradition…Holiday Green Beans. This recipe is so quick and easy, and it’s delicious. (Not to mention much lighter and healthier than the green bean casserole I had been making for years!) And none of my guests put up a fight.

This year, I’m adding a new dessert because there’s a recipe on the Mr. Food website that my kids love. It’s Cheesecake Filled Cupcakes, and they’re to-die-for! I know they’re not a typical Thanksgiving dessert, but I’m making them in addition to the apple pie and pecan pie.  

So, now I know that I can make minor changes to my menu, but gradually! How about you? Have you changed your menu? Let me know, and in the meantime, I wish all of you a happy Turkey Day!

Potato Puffs RE Appetizers to Satisfy Hungry Thanksgiving Guests

Mr. Food's Potato Puffs are the perfect appetizer, with their crunchy golden crust and soft potato insides! Everybody loves them!

 

Thanksgiving is, by far, my favorite holiday. It’s about the time of year, the season, family, friends, food – I love it all! Between my family and my husband’s family, we alternate hosting every year. 

When it rolls around to our turn, I kick into planning mode. I make lists, I research new recipes, and I make more lists. My husband laughs at me because of my lists, but it helps me stay organized. The actual Thanksgiving meal is easy for me. The challenge is keeping everyone out of the kitchen and busy while I prepare dinner. At our house, we don’t eat until late on Thanksgiving Day, so I need quick, easy appetizers to hold everyone over while they’re watching football. My all-time fave at this time of year is Cranberry Pecan Brie. I will make this one several times before the season is over. 

Then there are Potato Puffs. They’re so simple and no one ever turns them down. I also like to put out a bowl of some type of nuts. Instead of the boring can of mixed nuts, try Mr. Food’s Snackin’ Pecans.  

The other appetizer I make nearly every year, even if I am not hosting, is stuffed mushrooms. Last year I tried Golden Stuffed Mushrooms and they were delicious! 

Although I enjoy trying new recipes and cooking for my family and friends, in the end, it really doesn’t matter what we eat. What matters is being together and enjoying each other’s company. Watching the kids grow from year to year and playing together. We have a tradition in our home where we go around the table and each person gets a chance to share what they are thankful for. It may sound kind of corny, but if you’ve never done it, try it this year. You’ll be pleasantly surprised what people will say. Happy Thanksgiving!
