Tasty July 4th Memories

My favorite childhood memories of July 4th are about roasting marshmallows on our grill while watching the fireworks dotting the starlit night sky in the distance. Lots of our neighbors would bring their lawn chairs out in front of the garden-style apartment homes that lined our street in Mill Basin, Brooklyn. The grilling wasn’t done out back where I lived….we had a big front porch…no roof over it…and my Dad had a small Japanese hibachi-style grill that he would barbecue hamburgers and hot dogs on. Nothing fancy…no big recipe required, and yes, we would say we were having a “barbecue” and we ate right out there, too!

My mom would make a homemade potato salad that always had hard-cooked eggs in it – just like Mr. Food’s version Homestyle Potato Salad RE Tasty July 4th Memoriesof Homestyle Potato Salad, and my grandmother was famous for her freshly grated homemade coleslawand yes, Mr. Food’s Country Coleslaw is a pretty close version to hers. Dad liked the crunchy really tart deli-style pickles you could get from a barrel in the supermarket, so we often had those on hand. Many of the kids on the block would play games in the street – yes, in those days, kids could play outside at night…and be safe. It’s almost a by-gone era…but it’s such a nice summer memory. We’d hold sparklers and twirl them in our hands…and then after eating, we’d toast those big puffy marshmallows over the hot coals on long wooden skewers. It’s amazing they didn’t burn up…but they didn’t!

Popping a hot melty marshmallow in my mouth, with a bit sticking to my lips was as it good as it gets. The excitement of the colorful fireworks and the sound of them blasting in the sky was our version of a really good time. No video games today can compare…I think most folks would agree that the simplicity of enjoying a family gathering to celebrate our nation’s independence beats any high-tech experience.

All these years later, as I spend time with the team here planning our show topics and consulting with Mr. Food and our Smore Brownies RE Tasty July 4th MemoriesTest Kitchen on the perfect July 4th recipes…we’ve sure shared a load of them, and you’ll find loads here on mrfood.com right now. Some of my favorites from years gone by would have to be the simple ones…like Fresh Lemonade and anything with seafood…and whether you make your own S’mores with toasted marshmallows, graham crackers and a candy bar, or take it one step further and bake up our decadent recipe for S’more Brownies, you can’t go wrong!

I have to admit though…no matter how delicious they are…I still miss those days when I could enjoy my parents and grandparents food on a warm summer night, when life was a whole lot less complicated and an entire summer of lazy days and nights lay ahead. Hope you get to spend this all-American holiday weekend with your family and friends enjoying some good food and fireworks, just like my husband and I plan to do. And as we celebrate the holiday, let’s remember and thank all of our troops worldwide and their families who are without them today…so that we can be safe here at home.

Since you’re just getting to know me, I will share this about myself: I have never been described as “outdoorsy.” However, being a good sport, not to mention outnumbered by my son and husband, I decided to try camping for the first time. In a tent. Outside.

I let my husband worry about the sleeping bags, tools and finding a location. I decided to handle what I know best: meal planning and grocery shopping. I thought that, just because we were eating in the woods, it didn’t mean we couldn’t have a nice meal. This is when I learned about packet cooking.

The first recipe I tried was Mr. Food’s Orange Chicken Packets. You do all the prep work at home: slice it, dice it and wrap it up. You can even season the packets ahead of time so you don’t have to bring your spice rack with you. Dinner at the campsite was a breeze! I made the packets at home, labeled them and placed them in the cooler. When it was time to cook, we tossed the tasty bundles on the grill. Plus, there’s no mess — you just throw away the foil.

Another packet recipe from Mr. Food you may want to try is Shrimp and Corn Packets. And did you know you can also make dessert in packets? How about ooey gooey S’mores on the Grill? (Do I have to tell you which one was my son’s favorite?)

After doing packet cooking for our camping trip, it occurred to me: Why can’t we do this at home? It’s a nice change-of-pace dinner that I can do ahead of time, and it’s easy cleanup, too. It’s just like camping, only with air conditioning and without bugs!

Yay! We get a long weekend this week, in honor of our country’s birthday!

Not too many people refer to July 4th as Independence Day anymore, but that’s what we’re celebrating this weekend: winning our country’s independence from Britain.

And, speaking of independence, if you want to celebrate your own independence…from kitchen duty, that is, I’ve got some great July 4th recipes that are sure to make you and your family happy during this long (and, I hope, restful) weekend:

Father’s Day is Sunday. I bet I know all the things going through your mind this week: Cook or make reservations? What to cook? What gifts to buy?

What’s really important is to make the Dad in your life feel extra special for the day. In our house, that doesn’t involve fancy restaurants. What it means to us is a day to slow down and enjoy each other, and to let Dad relax.

As is typical in most households, my husband is king of the grill. He enjoys it, he is great at it and, let’s be honest, if he wants to be outside in 95-degree weather, cooking over an open flame, more power to him!

My grill king is always looking for new recipes for dry rubs, barbecue sauces or really anything new and different to try, like maybe throwing fruit on the grill.

I love finding new grilling gadgets to buy for him. It’s a win-win situation – he gets new “toys” and all of us get a delicious meal! One item that is on our shopping list is a new grill basket. They come in all shapes and sizes and they really make grilling so easy! Today’s Mr. Food show has more details about grill baskets.

No matter how you decide to celebrate this year, I wish all the fathers out there a very enjoyable and relaxing Father’s Day, especially my husband, who is not only the master of our grill but an amazing father to our son.

Reach out on Memorial Day and Beyond

Memorial Day is the traditional kickoff to the summer grilling season, so that usually means spending a fun day relaxing with family and friends and, of course, having a barbecue.

I wish a relaxing, tasty, great day to all of you. But before all the parties get underway, I hope you’ll find some way to remember and recognize all the members of the military, and their families, who’ve sacrificed so that we can all enjoy our freedoms.

I was recently reminded of my days serving in the Navy when I visited with U.S. Navy personnel aboard the USS Porter. These are terrific women and men whose job is to serve and protect us and all America stands for.

There are loads of Memorial Day parades and events all across the U.S. today, so please consider supporting one in your local community. I know it will be very meaningful to our military families, and to you and your family, too.

And if you’d like to make more of a difference after today, there are loads of ways to help our soldiers currently serving. You can send letters, care packages, or even reach out to help a military family in your community that might need a bit of help while their loved one is away. Thank you for giving of yourself and making the most of each and every day. After all, every day we want a reason to say…”OOH IT’S SO GOOD!!”

Living in a year-round warm climate, my husband and I grill out all the time. With Memorial Day coming, I thought I’d share one of our biggest grilling hits that’s different than the usual grilling fare, and super for a crowd! It’s Grilled Pita Pizza.

In fact, after I had my first Grilled Pita Pizza party a few years back, I shared the idea with Mr. Food, and he loved it, so we decided to create a show about it! What makes it special is that everyone gets involved in making their own pizza. It’s a fantastic icebreaker!

I put out all sorts of toppings from veggies to cheese and meats. I display them on a buffet table in unexpected containers like wine glasses and pitchers, and platters in all shapes and colors. I fill a fondue pot with warm pizza sauce, put the pitas in a bread basket and, when guests arrive, they make a bee-line straight to it, ’cause it’s so much fun to do! My husband is ready to cook up each one ’til it’s warm and melty – it takes just minutes! It’s a great way to feed a crowd on a budget, too.
