Just the other day, I was at QVC launching my new “Christmas Made Easy” cookbook and Ultimate Chocolate Fantasy, a new dessert item we’re offering that, I have to say, is really amazing.

As I was waiting in the green room at QVC, I was chatting with chef Tyler Florence. You probably know him from his show on the Food Network, “Tyler’s Ultimate,” or possibly you’ve been to one of his west coast restaurants. Just as I was hearing about his new restaurant opening in Napa in November, I was called into the makeup area.

Almost everyone on TV wears makeup. The bright lights they use can make you look all washed out if you don’t. So, after 15 minutes or so of making me “camera ready,” I went back to the green room to wait for my segment.

Then it was Tyler’s turn. I was thinking, “He looks that good and he doesn’t even have makeup on yet?” I mean, he’s young, great-looking (from what the women who work in my office tell me, he’s a real heartthrob)…plus he can cook.

Well, Tyler was back in just a few minutes and I thought to myself, “Gee, his makeup was done in no time!” Of course, it made perfect sense. It took a lot less time for the makeup artist to make Tyler “camera ready” than it did me! I guess that should be no surprise!

You know, even if my looks don’t get me the oohs and aahs that Tyler gets, I’m glad my recipes still earn lots of “OOH IT’S SO GOOD!!”

My Trip to Mississippi for Everything Catfish

I have to tell you…I’m not easily impressed. That’s why my recent trip to Mississippi to visit the U.S. Farm-Raised Catfish farms was such a surprise. I was blown away!

I’m definitely a fish-lover, along with being a big supporter of all things “made in the USA,” when they’re available and affordable. So I was looking forward to visiting the farm-raised catfish farms recently when my production team and I headed out to Jackson, Mississippi. Boy, it was hot!

And, when we landed, we were starving, so we headed off to get our first taste of the area’s catfish at a restaurant called Cock on the Walk that sits right on the edge of the Delta. We were greeted by a feast, and lots of Southern hospitality. The fried catfish was incredible – meaty and fresh-tasting. We just couldn’t get enough. Of course, there were all the fixins’, as well, like fried green tomatoes, pan corn bread and sautéed greens. That sure was good eating!

Then it was off to work, checking out the catfish farms. This is where I was the most impressed. Let me tell you, any negative thoughts I had about catfish were dismissed when I saw how these ponds were managed. The water is constantly refreshed, the fish are fed food that floats so they feed off the top, not the bottom, and the harvesting method is as natural as can be.

Seeing how catfish farming is done 150x150 My Trip to Mississippi for Everything CatfishNext we went to visit a processor, where we actually followed the entire process from the truck delivering the fresh live fish to the end of the line where they’re shipped to our markets. Again, the plant was very impressive, extremely clean, and the attention to quality was second to none. I was also blown away by how much fish just one plant processes on a daily basis. Guess how much: close to half a million pounds a day!

Then it was off to a quaint little restaurant, The Crown at Antique Mall, where we had a 5-course catfish meal. The catfish bisque was one of the best soups I’ve ever had; the catfish entrée, which I’ll be featuring on an upcoming show, was to-die-for; and the Southern desserts….well, they were amazing and, no, they didn’t contain catfish.

To wrap this up, let me say that, if you’re not already a U.S. Farm-Raised Catfish-lover like I am, please don’t “judge a book by its cover.” Try some. As a matter of fact, you should try it in my recipes for Catfish Antipasto Platter and Grilled Catfish Po-Boy sandwiches from yesterday’s and today’s TV segments. Food Holidays are Cause for Celebration

Before I came here years ago to join the Mr. Food team, I never knew there were actual food holidays. Now that it’s my job to know these things, it never ceases to amaze me that there are so many days, weeks and months honoring food!

I’ve come across all sorts of these food holidays. For instance, I found out that October is World Egg Day and the first week in December is Cookie Cutter Week – perfect timing for loads of our favorite holiday cookie recipes and other holiday treats. Just recently, June was National Dairy Month. There were lots of sales on dairy products at the market, which worked out great for our grilled cheeseburgers and an incredible gorgonzola-Dijon mustard sauce for sliced flank steak that my son-in-law whipped up on Father’s Day at our house. I’m betting you found a load of dairy bargains to enjoy in your recipes, too!

June is Dairy Month 300x225 Holy Cow!

June is Dairy Month, so the spotlight’s on our supermarket dairy case.

That means there are going to be loads of specials on dairy products and refrigerated foods for us to take advantage of this month. It’s a great time to pick up dairy staples like butter, cream cheese and other kinds of cheese, and also try new dairy products and different brands than you usually buy.
