While heavier fare may be fitting for those cold winter months, summer calls for something light and refreshing. What better way to celebrate than with your favorite fruit!

I’m sure you, like me, have your own personal favorites when it comes to fruit desserts. I, for one, can never turn down desserts with strawberries, especially if whipped cream is involved. The same can be said for peaches and bananas. However, my love for fruit knows no bounds, and if faced with a table full of different fruity desserts, I would probably grab a bit of every last one.

One of the great parts about summer: with so many graduation parties, wedding showers, reunions, and other gatherings, you get the opportunity to bake all kinds of fruit desserts, even pitting them against one another for the ultimate summertime showdown — at least as far as desserts go. Spring Has Sprung! Top 10 Spring Recipes

Winter wears out its welcome by mid-January. This is usually the point when I am exasperated with plunging temps, pricey heating bills, heavy overcoats, sidewalks that aren’t shoveled, my winter wardrobe…pretty much anything annoys me in the dead of winter.

But then there’s that first sign of spring – weather- or calendar-related, I don’t care – and almost immediately, my spirits lift thinking about the warm weather and green grass ahead. Another reason I look forward to spring is the abundance of produce in season! Green peas, asparagus and artichokes are at their peak, while rhubarb, strawberries and pineapples are fragrant springtime favorites.

Here’s a top 10 list of my favorite Mr. Food spring recipes:

  1. Asparagus Parmigiana – A great way to utilize fresh-as-spring asparagus, this cheesy veggie dish may make even your most finicky eaters new fans.

I love strawberries! There’s so much to know about them, so here’s a list I found of interesting strawberry facts and trivia:

  1. A strawberry has, on average, 200 seeds.
  2. Strawberries are the only fruit with seeds on the outside. It is argued that, for this reason, it cannot be considered a real berry, since berries carry seeds on the inside.
  3. If all the strawberries produced in California in one year were laid berry to berry, they’d wrap around the world 15 times.
  4. Ninety-four percent of U.S. households consume strawberries at least once a year.
  5. Strawberries are the first fruit to ripen in spring.
  6. The world’s largest strawberry shortcake is hosted in the annual strawberry festival in Lebanon, Oregon.
  7. In Belgium, there’s a museum entirely dedicated to strawberries.
  8. Strawberries are grown in every state in the United States and every province of Canada.
  9. California produces one billion (yes, with a B!) pounds of strawberries each year.
  10. Many people list strawberries as their favorite fruit. In a recent survey, over 53 percent of seven- to nine-year-olds picked strawberries as their favorite fruit.

It’s easy to get caught up in the commercialism of Valentine’s Day. Jewelry stores, flower shops, and even car dealerships are getting in on the holiday. (Who buys a car as a Valentine’s gift?!) While almost anyone in a relationship would want to acknowledge the holiday, it’s not necessary to go over the top.

When it comes down to it, I think that most people are happiest with a heartfelt gesture from their loved one. One of the best ways to show someone how much you care, is to cook for them. (We’ve all heard that the way to someone’s heart is through their stomach, right?)

If you want to make a nice dinner at home, instead of fighting crowds at a restaurant, why not try some of our easy, but still special, recipes? Artichoke Chicken is a light and flavorful entrée that is sure to impress. It pairs really well with our Double Stuffed Potatoes and Classic Creamed Spinach. Doesn’t that menu sound good? And it’s easy, too!

Saving the best for last, how about a super-special dessert? We have so many great dessert recipes, it’s hard for me to suggest just one. I’m picky about French fries. They’ve got to be really crispy, not soggy. I prefer thick-cut fries and, even though I know it’s not good to overdo it, I like ’em salty.

Okay, I’m particular. Growing up in New York City, I had to take a city bus to school, and that’s how I found the perfect fries. The afternoon bus stop was in front of a restaurant that sold my “dream fries” in a paper container from a take-out window! My girlfriends and I usually splurged at least once a week and shared an afternoon snack of fries with lots of ketchup. I can almost taste them now!

Years later, while in Amsterdam, Holland, I was in heaven when I got a taste of their version of fries, known as frites. They sell them all over in little French fry specialty shacks, in the city and in small villages outside the city where windmills are still in use. It’s a magical memory for me.

The thing that intrigued me about the Dutch fries is that these hot-and- crispy-on-the-outside, perfect-on-the-inside fries are served with a generous dollop of a special, unbelievably creamy mayo that has a slightly different flavor than anything we can buy in a jar here in the U.S. It’s a homemade taste. At first I was skeptical about having fries with mayo but, once I tried them, I was eating frites every chance I got…stopping at little shops up and down the Damrak and in Central Station…everywhere we went. It’s a good thing we didn’t spend more than a few days in Amsterdam before heading to some other equally food-tempting cities. If I kept up my fries-frenzy, I would have had to buy bigger clothes to get home!

Here at home, it’s not the same to have fries with store-bought mayonnaise, so I’m going to savor that tasty memory and try to get back to Amsterdam again, as it’s truly one of my favorite European cities. Luckily, I’ve learned some great tricks to making awesome American-style fries with fun toppings, thanks to recipes our Mr. Food Test Kitchen has come up with, like our Cheesy Burger Fries, and these Winning Fries that were shared with us not long ago. Plus, on a recent Mr. Food show, we shared a twist on fries that are perfect for casual entertaining. As for the mayonnaise issue, I don’t think I could duplicate that Dutch mayo…I’d rather go back to Holland and enjoy it there.

“This year is going to be different.” How many times have you said that? I think I probably say that at the beginning of each New Year. Every year, I say I want to lose weight and I think about what diet I am going to try. Nearly every one I have tried over the years has worked – until I got bored with it.

So this year, I am going into it with a completely different thought process. I know I want to change and this year I asked myself, “What do I need to do to make that happen?” The bottom line is I want to be healthier – for my family, for my friends, but mostly for myself. Look, we all know what we have to do, right? Fad diets are a temporary fix; it’s all about making better food choices and exercising. Let me just say this – I am NOT a dietician or nutritionist. However, I am a very experienced dieter. Maybe the reason I still have to “diet” is because I haven’t changed my lifestyle.

So that’s exactly what I am working on. I make time to have a bowl of healthy cereal at home in the morning rather than grabbing something on the go. For lunch, I switched from mayo to mustard on my turkey sandwich and replaced my regular bread with a high fiber whole grain wrap. Last night I had the same dinner I normally would have had, but filled up on salad (with a very light dressing) and only had one serving of yummy vegetarian Eggplant Parmigiana instead of two.

For me, it’s all about the planning. If the right choices are in my house and available to me, I can make better selections. I found some great tips at the office that I can share with you also: Smart Ways to Beat the Binges.

Working at Mr. Food doesn’t make it easy to have self-control. Not with all the tempting smells coming from our test kitchen every day. They are currently testing recipes for a new cookbook (Shh, I don’t know if I’m supposed to be saying anything about this yet), so there is A LOT of cooking going on!

This weekend, I will probably make a big pot of Skinny Soup to bring for lunch with my sandwich or salad; all the veggies that are in it are great for filling you up, not to mention how easy it is to make.

Oh, I almost forgot – I am also exercising. Instead of taking my dog for her normal walk, once she is done doing what she does, we power walk and then come home. Then, at night, we go for a longer walk than we used to. These are little steps, I know, but it’s a start.

I just began and I may not have lost any weight yet, but I feel better mentally because I know I am doing something great for ME! I hope this helps give you ideas for small changes, too.

Quick Guacamole 09 05 05 RE Endless Florida Visitors (Or...Guacamole Works for Last Minute Entertaining)

If you live in Florida, the week between Christmas and New Years has to be one of the most exhausting weeks of the year. No, we don’t have to shovel snow or worry about washing the salt off our cars from the plows…but we do have to deal with all the visitors that come to the Sunshine State for winter break. Oh, when I say “deal with,” please don’t take that in a bad way.

Ya see, if you live in South Florida, you probably originally came from somewhere else. That means your friends from all over the country flock here to visit family and friends. That also means restaurants are packed, tourists with pale white skin are at the beach even though the temperatures often are only in the 40s and 50s. I think it’s nature’s way of saying to all the visitors…”Don’t move here, the weather isn’t really that great.” And, like clockwork, the week after New Years, the temperatures go back to the mid 70s.

Anyway, the reason this week is so exhausting is that almost every day “we Floridians,” who, by the way, are not on vacation, get calls from our friends at the last minute and want to get together. “How about lunch or dinner or stopping by for a drink?” Sure, it sounds great but if you accept all the offers and still have to get up in the morning…let me tell  you, you really begin to drag.

The other night one of my college friends, Jeff, called and said we should get together. We met at his mom’s condo, where he was staying, after stopping by my assistant’s 40th Birthday bash and then visiting my stepmom in the hospital. She’s doing great, but that’s another story. So, at 9:30 pm, we finally got together. Well, we got there and it was like old times…plus, his mom couldn’t have been more gracious.

After the hugs and tour of her new kitchen, we were offered…wine, coffee, tea. My wife Patty, who, by the way, is the director of the Mr. Food Test Kitchens, and I sat down on the couch. We were then offered a platter of cut fruit, homemade guacamole and sinfully good honey cake. My friend’s mom was so proud that she had whipped up the guacamole in minutes from a couple of over-ripe avocados that were sitting on her counter. She said it was her first time and asked us what we thought. We tasted it and it was…very lemony. Like, pucker-up-and-kiss-me lemony. We said it was good but knew it wasn’t the best guacamole we ever had. Maybe it was the fact that our lips were still in the puckered-up position 10 minutes after our first dip. So then she asked us how she can make it better the next time. Let me tell you that, even though my wife and I eat, live and breathe food, we never criticize food when someone is being gracious to us.

She insisted, so we gave her some pointers and shared with her that she could find several versions of homemade guacamole at MrFood.com. Over time, we’ve found that it’s much more empowering to direct our friends to our website versus telling them how to make something when they call and ask us. It’s like the old story that it’s better to teach someone to fish rather than giving them fish. This way, they’ll never go hungry.

Well, a platter of fruit, a bowl of guacamole and a few slices of honey cake later, and it was already after 11 pm and we had a 30-minute drive home. Tired? Yes. Glad we saw our friends? Yes. And, knowing Jeff’s mom, she probably headed right to the market the next morning in search of a few very ripe avocados so she’s ready for the next time she has company.

As for us, even though New Years is over, 2 more friends to meet with tonight and relatives coming in this weekend, maybe I’ll pick up some avocados, too. Enjoy our guacamole!
