These one-pot wonders are so popular because they’re usually quick to throw together, which allows me more time to do some of the other things that I need to tend to as soon as I walk in the door. Now don’t get me wrong, they aren’t the quickest meal to cook in my dinner line-up, but since I can leave them in the oven or slow cooker, they’ve become my best friends.

Living in South Florida definitely has its advantages. When the news is reporting snowstorms around the country and we are heading to the beach, life is good. However, we also miss out on the change of the more mild seasons – especially my favorite one, autumn.

I didn’t always live in the South; I spent my early years living in the Northeast. This time of year we would see leaves changing colors, pull out our sweaters and long pants, and start cooking heartier meals in the oven, rather than on the grill.

For parents, once our little ones have mastered solid foods and we’ve ruled out allergies and taken pickiness into account, we don’t usually have to worry about our family menus too much…until somebody gets braces, that is.

Our older daughter was blessed with naturally straight teeth but our second daughter and our bank account weren’t so lucky. She’s been dealing with different phases of mouth appliances for a year and, as of last week, got the last of her braces put on. Ouch!

I was ready when she needed a few days of special foods that would work with braces — ready with more food than she could ever eat, but I wanted her to feel like she had choices. If you need soft foods for after dental work, too, I recommend my daughter’s favorite for “whatever ails ya’”: Mr. Food’s Best Mashed Potatoes Ever.

We actually started off a few of our “apres braces” meals with Creamy Tomato Soup then hit the potatoes or scrambled eggs. Of course, we couldn’t wait to finish our soft-food meals with either our Chunky Applesauce (don’t be afraid to cook it as long as you need to get the consistency you want) or Coffee Milk Shake (sans the liqueur).

So, the next time you’re trying to get more creative than pudding and Jell-O for soft-food meals, think ahead and make up some of Mr. Food’s specialties. My daughter promises: Comfort never tasted so good.

Making Memories with Food

This is a big week for family get-togethers! With Passover starting tonight and lasting for 8 days, and Good Friday and Easter later this week, everybody seems caught up in the flurry of preparing for big holiday meals.

No matter what holidays we celebrate now and all throughout the year, there are always “gotta have it” foods that we look forward to. That’s probably ’cause of the comforting memories they bring back of times when we enjoyed these traditional foods with our families and friends.

Chicken Casseroles: Make More & Make’em Last

Is there anything that tastes as home-cooked as a chicken casserole? Appearing on dinner tables coast to coast, chicken casseroles are popular because they’re pretty easy to make, there’s plenty of varieties to choose from, and there’s minimal clean-up thanks to the one-pan simplicity.

But here’s why I love casseroles: I make a bunch of dishes at the same time, then freeze them for future meals. This is perfect for those nights I get home late, or am too lazy to spend hours in the kitchen cooking dinner. To make it even easier, I use disposable aluminum foil pans – that way, I don’t have to let a baking dish sit in the freezer when I might need it for other recipes!

Be sure you let the foil pan cool completely after the casserole is finished cooking, then wrap it securely before freezing. Casseroles will keep in your freezer for up to six months (but I don’t like to wait longer than two or three months).

Reader Twists on Mr. Food Favorites: Lasagna Rollups

What’s my favorite part about cooking? The creative freedom that goes along with each recipe I make. If there’s too much butter or oil for my taste, maybe I’ll substitute with applesauce. Or if a recipe calls for diced jalapeños, I may eliminate them entirely. (I’m no wuss, but sometimes I just can’t handle the heat!) I appreciate that recipes don’t have to be literally interpreted, and like to hear how other cooks tweak recipes.

Our Mr. Food readers are a great source of recipe variations. We love to hear when they’ve added a new ingredient for a different spin, or discovered a “lighter” version of a familiar favorite. Take Lasagna Rollups, for example. These scrumptious cheesy pasta rolls will put an end to debating who gets an “innie” and who gets an “outie” serving slice of lasagna. (Admit it: like brownies, the innie parts taste best!) As it’s a rather decadent pasta dish, Mr. Food includes tips on making it lighter using reduced-fat substitutions.

Readers pinklady627 and gluegun both have their own lighter versions of manicotti crepes, inspired by Mr. Food’s Lasagna Rollup recipe!

From pinklady627 comes a light and fast variation you can make and store for months:

“I make my own manicotti crepes. 2 cups flour. 1 cup water, 1 cup milk, dash of nutmeg. Mix all together. Heat up skillet and pour batter in & cook till batter is not wet. Do not brown. Flip over to cook top briefly. Cool and stack. Crepes can be frozen too. Wrap in wax paper, place in plastic bag. Will keep about 2 months. Very easy. Very delicious & light to digest.”

From gluegun comes a super-easy crepe you can make with Bisquick that you probably already have on-hand:

“For even lighter roll-ups I make crepes, so easy to do! 1 cup original Bisquick mix 3/4 cup milk, 2 eggs, pour 2 or 3 tablespoons into a hot skillet, rotate skillet until batter covers bottom, cook until golden. Gently loosen edge with spatula, turn and cook other side until golden, stack crepes, with waxed paper between, as remove from skillet, keep crepes covered to prevent drying out, spoon filing onto crepes, roll up. Place seam side down, bake as recipe above.”

As a kid, it seemed like we had a revolving door of dinner table staples I wasn’t always excited about. There were certain meals I looked forward to (ravioli with a huge serving of parmesan cheese) and could eat five days a week, and some meals I would dramatically choke down (chicken pot pie).
