While heavier fare may be fitting for those cold winter months, summer calls for something light and refreshing. What better way to celebrate than with your favorite fruit!

I’m sure you, like me, have your own personal favorites when it comes to fruit desserts. I, for one, can never turn down desserts with strawberries, especially if whipped cream is involved. The same can be said for peaches and bananas. However, my love for fruit knows no bounds, and if faced with a table full of different fruity desserts, I would probably grab a bit of every last one.

Dig in to St. Patrick’s Day Desserts

Irish food gets a bum rap. Most Americans consider “Irish cuisine” to be an oxymoron, and that every dish is salt-laden, starchy and boring. Like England, their neighbor to the southeast, Ireland’s culinary repertoire is often judged on its Americanized counterparts – pub food like corned beef sandwiches, bangers and mash, colcannon, shepherd’s pie, and boxty.

But there’s so much more than meets the eye with Irish food, and with St. Patrick’s Day rapidly approaching, it’s a great time to check out some new and different Irish recipes that maybe you’ve never seen before. To shake things up, let’s start with the sweet stuff first and dig in to St. Patrick’s Day desserts!

  • Irish Soda Bread is, and always will be, my favorite Irish treat. True, it’s not “dessert-y” like some of the other foods on our list, but there’s nothing better than fresh-from-the-oven soda bread and slathered with butter! There’s many variations but my personal fav includes golden AND dark raisins.

  • Green bagels, green cookies, green beer…everything turns green for St. Patrick’s Day. Our Minty Green Mousse makes a neat treat for kids and mint-lovers alike. Make it fancier by serving it in chocolate cups with a sprig of mint and chocolate shavings!
  • Milkshakes are a year-round delight but check out our blarney spin on an old favorite: the Irish Milk Shake with chocolate-covered milk patties. YUM.   • Layered parfaits look cool and are fun to eat. I really liked the Irish Trifle recipe from Hoosier Homemade – it’s fast, easy and budget-friendly.
  • Potatoes pop up everywhere in Irish recipes, even in dessert-style dishes. I found this custard-like Irish Potato Pie on Have the Cake food blog, a great option if you don’t want to cook with beer or liquor. Not surprisingly, many Irish desserts rely heavily on those ingredients! (See below.)

If you’re like most, you want to celebrate St. Patrick’s Day in true Irish fashion, i.e. with a pint or other alcoholic beverage! So I’ve gathered several recipes that include liqueur or beer, ranging from ice cream to brownies.

  • For a sweet cake with an even sweeter glaze, do not forget to bring  our Irish Cream Cake to your St. Patrick’s Day shindig! It serves 12 and gets a great kick from your favorite Irish cream liqueur.
  • Similarly, these “boozy” Irish Cream Brownies, courtesy of Baking Bites, also feature cream liqueur, which is mixed in with the batter to infuse it with flavor. The delectable Bailey’s Irish Cream Mousse Pie on the Saving Room for Dessert blog features Ghirardelli white chocolate and a graham cracker crust. The picture alone is to die for!
  • Finally, there’s a truly unique Irish dessert for those adventurous cooks who like a challenge. Beer pops up in many unusual places but how about about ice cream? Chocolate Stout Ice Cream, courtesy of The Pink Apron blog, was adapted from a David Lebovitz recipe. While the stout/ice cream combo may sound strange, it’s the same principle that propels the Guinness Milkshake. Not a beer fan? The chocolate helps balance the flavor of the stout so the result is a sweet (but not too sweet) and creamy delight!

Madagascar, Vanilla…and my Dog!

When I was a teenager, I saved my babysitting money and bought a Bichon puppy from a breeder. Unfortunately, my mom was allergic to her, so we had to give her to a family friend. I was heartbroken at the time, and my mom always said to me, “When you get married, you’ll get a dog.”

When I did get married, my husband loved cats and so did our daughter so, for many years, instead of a dog, we had a beautiful orange tabby cat. Finally, four years ago, I decided to treat myself to a puppy for my birthday! While searching online for another Bichon, I found a rare breed of dog that I had to have. I love novelty, and he fit the bill! I had him flown in from across the country. He’s a Coton de Tulear, which means that anyone who asks me what he is responds with, “Huh?”

I discovered that Cotons are the Royal Dog of Madagascar. While I was reading about Cotons, I also did some reading about Madagascar and realized that much of the world’s vanilla comes from there and other islands in the Indian Ocean. It figures that even my dog would have a connection to food, because somehow lots of my life experiences wind up becoming part of the Mr. Food shows I write. So, in honor of my dog who has his roots in Madagascar, I want to share a few Mr. Food recipes that have vanilla in them.

My all-time favorite is none other than a scrumptious but simple Vanilla Cake with Chocolate Cream Cheese Frosting. Love it! Another one I think you’ll like is rich and creamy homemade Vanilla Custard.

And don’t miss our Vanilla Nut Butter. I recently shared great entertaining tips for breakfast and brunch, and this one fits perfectly over pancakes or waffles…give it a try!

I give all these vanilla recipes a thumbs up, and my dog raises his paw for them, too! We’re fortunate that my in-laws and my husband’s siblings’ families all live within a short distance of us. We get together often, and the kids all love spending time together. (In addition to my son and daughter, I have three nieces.)

Our family uses every excuse to celebrate. Why not, right? And this week we have a great reason to celebrate…my father-in-law just turned 85! He’s in great health and still working as a pharmacist!

We’re having everyone over to our house for a birthday dinner and I want to make something easy  that still feels special. I think I’m going to make Mr. Food’s Mustard Glazed Tenderloin. Even though it only has six ingredients, it’s still elegant enough for a special occasion. (And my father-in-law loves beef tenderloin, so I think he’ll really love it!)

Of course, I have to make a special dessert, too. Since it’s all about my father-in-law, and he loves pecans, I’m going to make the Pecan Cake that’s right here on MrFood.com. I hope I can get it to look as beautiful as it looks in the picture. Either way, I know it will be delicious (and I think I’ll score major daughter-in-law points)! Happy Birthday, Dad!

I am the queen of procrastination when it comes to gathering together old family photos and recipes, but I finally got inspired after watching this great show on TV recently. It’s called “Who Do You Think You Are?”. It seems to have had just 7 episodes – but I LOVE IT! I hope it will be back on again but, either way, it got me to go online and check out Ancestry.com.

I found a lot of family history information that I didn’t even realize I could easily access. With most of the senior members of my immediate family gone, there’s no one to ask, and I want to preserve what I can for my daughter and her family.

So, finally, and I mean finally, because I’ve thought of doing it a gazillion times before, I started digging out those handwritten recipes from the back of my kitchen junk drawer. The ones typed on my mother’s old typewriter for her special brisket (that, try though I might, I can never make quite the same as hers) and yes, even a very yellowed newspaper clipping from the New York City paper “The News” for a $5 winning French Cheesecake recipe of my grandmother’s from the 1950s! I have a secret recipe of my own for New York Cheesecake that is my “specialty,” but I adored my grandmother and I really should give this one a shot in her memory.

Anyhow, before I start baking, and before I continue gathering the photos and putting together the family tree (and giving up on the whole thing because I have other stuff to do), I really want to put together a family recipe cookbook and give it to my daughter and a few of my cousins who I know would get a kick out of it. In fact, over the years, we’ve created a couple of Mr. Food shows on family cookbooks and how to make your own. You’d think I would have done my own family cookbook then. Well, I’m doing it now, really I am. I might even be convinced to share the cheesecake recipes (mine and my grandmother’s) with Mr. Food…and maybe one day he’ll share them on the air.

Meanwhile, we have some super cheesecake recipes here at MrFood.com that you can try out. And maybe you’ll want to make a family cookbook and give it to your loved ones for the holidays. It’s a nice tradition to start for the next generation. I’ll let you know if I ever finish mine. Stay tuned!

Taping is an Endless Food-Fest

In my last blog, I told you about preparing for our hectic show-taping days and, as a matter of fact, I’m doing that right now…because next week we’re taping again.

So, what happens when our cameramen hear the word “speed” on their headsets from the control booth? The set immediately gets quiet. And, invariably, that simple word has an amusing power of suggestion! Every once in a while, someone on our team can be seen holding their breath for the full 90 seconds of a Mr. Food segment, so as not to sneeze or cough and stop the cameras from rolling!

As we change up the set for each TV segment, it’s funny to watch everybody eyeing the “goods,” because a lot of that food on the set makes it to our lunch plates! You would think that, in a place where food is constantly on our minds and readily available, we would be “over it” when it was time to eat! Oh, no…not at all!

Million Dollar Pound Cake 03 05 10 RE Taping is an Endless Food Fest

At a recent taping, no one could resist the Million Dollar Pound Cake! We could barely wait ’til we finished taping that segment to grab a slice…and it was all you’d want from a pound cake – buttery, moist and not too sweet. I mean, let’s face it, we know what you know – Mr. Food’s recipes are really good!

I’ll let you in on a coming attraction secret: For next week’s shoot, we have one show that features eight desserts! Yes, eight of them! And I have a feeling we’re not going to make it ’til lunch to grab a taste! I can already envision the parade there’s going to be behind the grips who carry the heavy countertops out of the studio! It’s amazing we’re not all sleepy by the afternoon, but taping does go on all day and we’re always energized, because we share a lot of laughs and camaraderie, too!

Of course, if you think that all taping days go as planned…they don’t! We’ve got our share of Mr. Food bloopers, but I’ll tell you about those another time. So, as the expression goes, “stay tuned!”
