Heated arguments have never settled the eternal debate on pronunciation – potayto or potahto? – but one certainty emerged last weekend at the Food Network South Beach Wine & Food Festival: Chef Carlos Barilla (of Beer & Burger Joint in Miami Beach) channeled his love of spuds into a grand-prize winning side dish, Truffle Baked Potato Salad.

Baked Potato Salad RE a Spud Wars: Mr. Food Judges the Side Dish Challenge at the Food Network South Beach Wine & Food Festival

With very own Mr. Food, aka Art Ginsburg, on the judging panel and hosted by Rachael Ray, the fifth annual Amstel Light Burger Bash® invited top chefs from around the country to battle for the best burger. The Idaho Potato Commission upped the ante for a good cause and challenged Burger Bash® participants to create an outstanding side dish using Idaho® potatoes. The Grand Prize was a $5,000 donation to Florida International University, made by the IPC on behalf of Chef Barilla.

The IPC Side Dish challenge tested the chefs’ ability to think outside the box and get creative with the potato, a frequent dinner side and fast-food staple. Mr. Food and fellow judges Frank Muir and Don Odiorne of the IPC scored competing side dishes on a five-point scale for each of the following criteria: Use of Product, Originality, Presentation, and Flavor. The side dish with the highest total score captured the Grand Prize. We knew the winner had been identified when Mr. Food had a taste of the Truffle Baked Potato Salad and declared, “OOH IT’S SO GOOD!!”

Mr. Food also praised the chefs for their inventive interpretations of a classic vegetable…even one that might not be so exciting or trendy. “I understand the needs of how America cooks and am always on the look out for innovative, great-tasting recipes that use every day staples, like Idaho® potatoes. Tonight’s side dishes wowed all of us,” said Mr. Food. “It’s so important to stay motivated in the kitchen and try something new. The dishes we sampled tonight were a true tribute to the chefs’ ingenuity. Have fun while you’re cooking; think out of the box and experiment – your friends and family will love you for it!”

Now in its tenth year, the Food Network SOBE Wine & Food Festival is presented by Food & Wine and draws foodies from all over, as well as a host of celebrity chefs in the Food Network family such as Bobby Flay, Paula Deen, Giada De Laurentiis, Emeril Lagasse, and many more. Over 50,000 wine and food lovers attended this fabulous four-day event festival to see the world’s most renowned chefs and wine and spirit producers up-close and personal.

TYLER FLORENCE SOBE 2011 SOBE Thrillists BBQ & The Blues, Hosted by Tyler Florence & John DeLucie

What a treat it was to watch Tyler Florence do his thing at the SOBE Wine & Food Festival!

Even though I’m a native New Yorker, and the Big Apple is a magical city, now that I’ve spent so much of my life in South Florida, I have to say that we have our very own magical places, and one certainly is the section of Miami known worldwide as South Beach (or “SOBE,” to those “in the know”), now a popular center of fashion, night-life, tourism, and great food. Every February, the Food Network sponsors it huge South Beach Wine & Food Festival here.

There are so many star-studded parties during the Festival and, each year, I’ve had a great time attending a few of them. (Although some parties are private, most are open to the public – so if you’re going to be in South Florida next February, you should buy your tickets for favorite food events early, ’cause they sell out fast!) 

This year, I got to mix and mingle with barbecue aficionados at the historic art deco Raleigh Hotel on world-famous Collins Avenue, where Food Network star Tyler Florence was the main draw, along with several other talented chefs, for the highly anticipated Thrillist’s BBQ & The Blues event. It was really exciting to watch Tyler Florence cooking right in front of us! You don’t get to do that often! So what was this evening like?

Well, talk about magic! Right under the stars, in the sand, with live blues music playing, the aromas of beef on the grill were everywhere as folks lined up for a taste of a variety of styles of barbecue dishes that were awesome.

The brisket literally melted in our mouths. It was so tender, no knives were needed. The flavors ranged from Texas-style, Creole, and Asian to down-home southern. Tyler served a tri-tip steak with buttermilk toast and butter pickles along with black-eyed peas and chickweed! Really novel. There was even a Banana Dream Pudding shot. I couldn’t believe I dropped my first one in the sand, as I tried balancing 3 dishes on one plate. (I don’t recommend that!) Yes, I got another one, because I was determined not to miss out on that!

After eating my way through that entire barbecue smorgasbord, I did have another late-night party to attend with more amazing food…and I’ll tell you about that one next! Meanwhile, if you ever have a chance to head to the South Beach Wine & Food Festival, do it, because it really is an experience you won’t forget! I know I won’t.

Madagascar, Vanilla…and my Dog!

When I was a teenager, I saved my babysitting money and bought a Bichon puppy from a breeder. Unfortunately, my mom was allergic to her, so we had to give her to a family friend. I was heartbroken at the time, and my mom always said to me, “When you get married, you’ll get a dog.”

When I did get married, my husband loved cats and so did our daughter so, for many years, instead of a dog, we had a beautiful orange tabby cat. Finally, four years ago, I decided to treat myself to a puppy for my birthday! While searching online for another Bichon, I found a rare breed of dog that I had to have. I love novelty, and he fit the bill! I had him flown in from across the country. He’s a Coton de Tulear, which means that anyone who asks me what he is responds with, “Huh?”

I discovered that Cotons are the Royal Dog of Madagascar. While I was reading about Cotons, I also did some reading about Madagascar and realized that much of the world’s vanilla comes from there and other islands in the Indian Ocean. It figures that even my dog would have a connection to food, because somehow lots of my life experiences wind up becoming part of the Mr. Food shows I write. So, in honor of my dog who has his roots in Madagascar, I want to share a few Mr. Food recipes that have vanilla in them.

My all-time favorite is none other than a scrumptious but simple Vanilla Cake with Chocolate Cream Cheese Frosting. Love it! Another one I think you’ll like is rich and creamy homemade Vanilla Custard.

And don’t miss our Vanilla Nut Butter. I recently shared great entertaining tips for breakfast and brunch, and this one fits perfectly over pancakes or waffles…give it a try!

I give all these vanilla recipes a thumbs up, and my dog raises his paw for them, too! You know, I bet a lot of you have given your pets sweet names like “Cookie” or “Candy,” so maybe you have some recipes that remind you of your little four-legged friend? Skinny Soup RE New Year, New Me

Mr. Food's recipe for Skinny Soup is perfect for lighter eating

“This year is going to be different.” How many times have you said that? I think I probably say that at the beginning of each New Year. Every year, I say I want to lose weight and I think about what diet I am going to try. Nearly every one I have tried over the years has worked – until I got bored with it.

So this year, I am going into it with a completely different thought process. I know I want to change and this year I asked myself, “What do I need to do to make that happen?” The bottom line is I want to be healthier – for my family, for my friends, but mostly for myself. Look, we all know what we have to do, right? Fad diets are a temporary fix; it’s all about making better food choices and exercising. Let me just say this – I am NOT a dietician or nutritionist. However, I am a very experienced dieter. Maybe the reason I still have to “diet” is because I haven’t changed my lifestyle.

So that’s exactly what I am working on. I make time to have a bowl of healthy cereal at home in the morning rather than grabbing something on the go. For lunch, I switched from mayo to mustard on my turkey sandwich and replaced my regular bread with a high fiber whole grain wrap. Last night I had the same dinner I normally would have had, but filled up on salad (with a very light dressing) and only had one serving of yummy vegetarian Eggplant Parmigiana instead of two.

For me, it’s all about the planning. If the right choices are in my house and available to me, I can make better selections. I found some great tips at the office that I can share with you also: Smart Ways to Beat the Binges.

Working at Mr. Food doesn’t make it easy to have self-control. Not with all the tempting smells coming from our test kitchen every day. They are currently testing recipes for a new cookbook (Shh, I don’t know if I’m supposed to be saying anything about this yet), so there is A LOT of cooking going on!

This weekend, I will probably make a big pot of Skinny Soup to bring for lunch with my sandwich or salad; all the veggies that are in it are great for filling you up, not to mention how easy it is to make.

Oh, I almost forgot – I am also exercising. Instead of taking my dog for her normal walk, once she is done doing what she does, we power walk and then come home. Then, at night, we go for a longer walk than we used to. These are little steps, I know, but it’s a start.

I just began and I may not have lost any weight yet, but I feel better mentally because I know I am doing something great for ME! I hope this helps give you ideas for small changes, too.

The True Meaning of Thanksgiving

With Thanksgiving less than a week away, most of us are getting excited. As for me, I love that this is the big kick-off to the holidays. Many of us can’t wait for the 4-day weekend, the lazy days curled up on the couch watching football while chowing down on a big overstuffed turkey sandwich made from leftovers. I know my neighbors are already strategizing over which stores they’ll attack first in the wee hours on Black Friday. 
 
I’m looking forward to all the hoopla that comes with the holiday, however the thing that I’m looking forward to the most next weekend is being able help those in need. You see, my wife Patty and I run the kitchen at a local church that feeds those who aren’t as fortunate as many of us. Last year, we helped serve over 1500 people on Thanksgiving Day. And what is so surprising is that we aren’t feeding just the homeless. The lines are made up of moms and dads and kids and seniors who simply just don’t have the money to put a Thanksgiving meal on the table. Let me tell you that in the last couple of years, with so many people out of work, the number of mouths to feed way outgrew the unemployment rate.
 
Having been in the food industry since I was “knee-high to a grasshopper,” I just love the feeling of helping out. Last year, we (when I say “we,” I mean a team of about 50 volunteers) carved over 100 turkeys, made hundreds of pounds of stuffing, sweet potatoes, mashed potatoes, veggies and enough gravy to fill several bathtubs. That’s not to mention the hundreds of pies, cakes and such that added a sweet ending to everyone’s meal.
 
Is it a lot of work? You bet. Does it mean that my family eats later on Thanksgiving than we would like? Yes, but let me tell you that when we do finally sit down to dinner, and before we eat, we go around the table and all share at least one thing that we are thankful for. At that point, all I have to do is look up at my family and friends…in my house with a feast of food on the table after spending all day helping those less fortunate, and a tear of joy comes to my eye as I realize just how fortunate I am. To me, this is what the holidays are all about.
 
If you haven’t experienced this feeling, let me tell you it’s amazing. Don’t know where to start? Maybe volunteer at a food bank or as a server at a local food kitchen, or gather up some canned items and bring them to a local food pantry.
