With the 2012 Summer Olympics before us, we’re all ready to watch our favorite athletes compete for gold. Now, while I’m more of a Winter Olympics fan, I’m still getting anxious for the start of the competitions and of course, the opening and closing ceremonies. Seeing so many incredible athletes from all different nationalities and backgrounds come together in one place really helps exemplify the spirit of the games.

To celebrate the heritages of all of these great nations, we thought we should share some of our favorite ethnic recipes, from appetizers to desserts, and have you decide which one deserves the gold. Take a peek at these ten countries’ recipes, and help us decide which one should come out on top.

Speaking of the new year, it’s about time you checked in on your New Year’s Resolutions.

Every year, my resolutions stay strong for about three weeks. That’s followed by about a week of guilt, and by the time February rolls around, I’ve determined that I’m too busy right now to follow through. I’ll get around to it all once life slows down. It’s funny how that magic window of time never quite appears. Spring pops up, and I still haven’t started to eat healthier, take more pictures, get in touch with old friends, or take up a new hobby. Does any of this sound familiar?

That’s why March is the perfect time for a resolution renewal–New Year’s 2.0, if you will. Take those nutritional goals you and your friends toasted over, dust them off, and head out again for round two. We’re here to help!

Yep, Idaho…where the best potatoes in the world are grown. We went as part of our quest to learn more about foods that are grown in the “good ol’ USA.”

While we were there, we went over to the Idaho Potato Commission’s office to find out just what makes their potatoes so unique. And although the answer is really more complex than I want to share here, it all comes down to the rich soil they grow in and the ideal growing climate.

Not sure about endive? It’s just a little fancier than celery or lettuce, has a bit of a bite in flavor and makes an excellent scoop!

March was once a quiet month for celebrations, but we Americans seem to always want to party, so between St. Patrick’s Day, March Madness and Mardi Gras, there is merrymaking on the horizon somewhere. Pull out the blender and (aside from the margaritas), impress some folks with this appetizer that is surprisingly light, obviously healthy and delivers for any GREEN themed party.

Quick Guacamole 09 05 05 RE Endless Florida Visitors (Or...Guacamole Works for Last Minute Entertaining)

Homemade guacamole is one of the easiest last-minute entertaining dishes you can make!

If you live in Florida, the week between Christmas and New Years has to be one of the most exhausting weeks of the year. No, we don’t have to shovel snow or worry about washing the salt off our cars from the plows…but we do have to deal with all the visitors that come to the Sunshine State for winter break. Oh, when I say “deal with,” please don’t take that in a bad way.

Ya see, if you live in South Florida, you probably originally came from somewhere else. That means your friends from all over the country flock here to visit family and friends. That also means restaurants are packed, tourists with pale white skin are at the beach even though the temperatures often are only in the 40s and 50s. I think it’s nature’s way of saying to all the visitors…”Don’t move here, the weather isn’t really that great.” And, like clockwork, the week after New Years, the temperatures go back to the mid 70s.

Anyway, the reason this week is so exhausting is that almost every day “we Floridians,” who, by the way, are not on vacation, get calls from our friends at the last minute and want to get together. “How about lunch or dinner or stopping by for a drink?” Sure, it sounds great but if you accept all the offers and still have to get up in the morning…let me tell  you, you really begin to drag.

The other night one of my college friends, Jeff, called and said we should get together. We met at his mom’s condo, where he was staying, after stopping by my assistant’s 40th Birthday bash and then visiting my stepmom in the hospital. She’s doing great, but that’s another story. So, at 9:30 pm, we finally got together. Well, we got there and it was like old times…plus, his mom couldn’t have been more gracious.

After the hugs and tour of her new kitchen, we were offered…wine, coffee, tea. My wife Patty, who, by the way, is the director of the Mr. Food Test Kitchens, and I sat down on the couch. We were then offered a platter of cut fruit, homemade guacamole and sinfully good honey cake. My friend’s mom was so proud that she had whipped up the guacamole in minutes from a couple of over-ripe avocados that were sitting on her counter. She said it was her first time and asked us what we thought. We tasted it and it was…very lemony. Like, pucker-up-and-kiss-me lemony. We said it was good but knew it wasn’t the best guacamole we ever had. Maybe it was the fact that our lips were still in the puckered-up position 10 minutes after our first dip. So then she asked us how she can make it better the next time. Let me tell you that, even though my wife and I eat, live and breathe food, we never criticize food when someone is being gracious to us.

She insisted, so we gave her some pointers and shared with her that she could find several versions of homemade guacamole at MrFood.com. Over time, we’ve found that it’s much more empowering to direct our friends to our website versus telling them how to make something when they call and ask us. It’s like the old story that it’s better to teach someone to fish rather than giving them fish. This way, they’ll never go hungry.

Well, a platter of fruit, a bowl of guacamole and a few slices of honey cake later, and it was already after 11 pm and we had a 30-minute drive home. Tired? Yes. Glad we saw our friends? Yes. And, knowing Jeff’s mom, she probably headed right to the market the next morning in search of a few very ripe avocados so she’s ready for the next time she has company.

As for us, even though New Years is over, 2 more friends to meet with tonight and relatives coming in this weekend, maybe I’ll pick up some avocados, too. Enjoy our guacamole!

Appetizers to Satisfy Hungry Thanksgiving Guests

Potato Puffs RE Appetizers to Satisfy Hungry Thanksgiving Guests

Mr. Food's Potato Puffs are the perfect appetizer, with their crunchy golden crust and soft potato insides! Everybody loves them!

 

Thanksgiving is, by far, my favorite holiday. It’s about the time of year, the season, family, friends, food – I love it all! Between my family and my husband’s family, we alternate hosting every year. 

When it rolls around to our turn, I kick into planning mode. I make lists, I research new recipes, and I make more lists. My husband laughs at me because of my lists, but it helps me stay organized. The actual Thanksgiving meal is easy for me. The challenge is keeping everyone out of the kitchen and busy while I prepare dinner. At our house, we don’t eat until late on Thanksgiving Day, so I need quick, easy appetizers to hold everyone over while they’re watching football. My all-time fave at this time of year is Cranberry Pecan Brie. I will make this one several times before the season is over. 

Then there are Potato Puffs. They’re so simple and no one ever turns them down. I also like to put out a bowl of some type of nuts. Instead of the boring can of mixed nuts, try Mr. Food’s Snackin’ Pecans.  

The other appetizer I make nearly every year, even if I am not hosting, is stuffed mushrooms. Last year I tried Golden Stuffed Mushrooms and they were delicious! 

Although I enjoy trying new recipes and cooking for my family and friends, in the end, it really doesn’t matter what we eat. What matters is being together and enjoying each other’s company. Watching the kids grow from year to year and playing together. We have a tradition in our home where we go around the table and each person gets a chance to share what they are thankful for. It may sound kind of corny, but if you’ve never done it, try it this year. You’ll be pleasantly surprised what people will say. Happy Thanksgiving!

Easy Mr. Food recipe for Sweet-and-Sour Wings, perfect for game-watching parties!

So, I put my husband’s wants before mine and purchased Direct TV’s “NFL Sunday Ticket” package as a birthday gift for him. I don’t know if you’re familiar with it, but basically he and our son can now watch EVERY NFL game that is broadcast. EVERY GAME. EVERY SUNDAY. Well, for the last two Sundays, both my husband and my son have been glued to the TV for the whole afternoon and night. And, we’ve had various guest “couch potatoes” each week, too.

If you have your own couch potato, you know that they are hungry animals. Something about cheering or booing those teams gives them hearty appetites! I always put out an assortment of chips & salsa, cheese & crackers and hummus, but I also like to give them something more substantial. (That way, they won’t have to order in pizza!)

Last week, I made Mr. Food’s recipe for Sweet-and-Sour Wings and they were a huge hit! (I liked the recipe because there were only 4 ingredients!) They were sweet and tangy, and sticky and crunchy. Yum! I also made a Stuffed Deli Sandwich which was so easy to make ahead and leave for them to devour.

Everybody loves these fun, chocolaty Game-Day Cupcakes from Mr. Food!

This Sunday, for dessert, I’m going to surprise them with chocolaty Game-Day Cupcakes. I tried them at work when the test kitchen made them and they really do taste as good as they look!
