Howdy, I’m Rachel. I am a college student studying design and art history while juggling the ways of living on my own. I am not at all a stranger to the kitchen, but I am unfamiliar to the ways of cooking for one. I’m infatuated with my Shih Tzu (Moose), my Nikon D7000, and the Adobe Design Creative Suite for Mac.
Favorite Mr. Food recipe: Mini Chocolate Chip Cheesecakes
How often do I cook? 3 times per week (because Chipotle burritos just call my name…)
Who am I cooking for? Me and my hungry roommates
How long have I been cooking? My mother sat me on the counter when I was about four years old and introduced me to the same stand mixer that is in my kitchen today – let’s just say it’s been a fifteen year love affair.
My biggest challenge in the kitchen: Cooking for just one – I just want to feed everybody but my college pocket just won’t allow it!
What profession best describes me in the kitchen? Lately, I’ve been more of the scientist in the kitchen – experimenting with new ingredients and achieving the perfect light and airy cupcake. My next endeavor? Bread!
The kitchen appliance I couldn’t live without: I long for my mother’s stand mixer, but I suppose my hand mixer does the job. (Do you hear that, Santa?)
My ultimate meal: Grilled salmon with a lemon-dill butter, couscous and asparagus broiled in olive oil, followed by homemade vanilla ice cream and peaches (this is my Birthday Menu, courtesy of dear ol’ Dad).
The one food I can’t stand: Okra – I may have lived in the South for ten years, but I still don’t get it.
The food that instantly takes me back to childhood is: To pin one, Steak ‘N Shake vanilla milkshakes – a special treat from mom on the way home from a doctor’s appointment or just because – she’s the best!
If I were a spice, I would be: Cinnamon – I can spice things up and add an extra special something – the attributes of an arteest! That, and it describes my hundreds of freckles and (however bottled) spicy auburn hair color.
My favorite food that grows from the earth is: Cucumbers; the perfect dipping veggie. Bring on that balsamic vinegar!
If I could have dinner with anyone in the world, dead or alive, it would be: Michelle Obama – I believe conversation is a major part of a great meal and she and I would have a wonderful chat, mostly about her White House vegetable garden!
Sweet tooth, or salt-craver? What’s my weakness? Frozen yogurt has become a passion of mine – topped with graham cracker crumbs and fresh blueberries. Delish!
