Art & I at Bronco Stadium
If you love potatoes like I do, I bet you would have loved to tag along as Art and I (a.k.a. Mr. Food) went to Idaho this past week. Yep, Idaho…where the best potatoes in the world are grown. We went as part of our quest to learn more about foods that are grown in the “good ol’ USA.”
While we were there, we went over to the Idaho Potato Commission’s office to find out just what makes their potatoes so unique. And although the answer is really more complex than I want to share here, it all comes down to the rich soil they grow in and the ideal growing climate.

We shared recipes with their team and they shared many recipes with us. I couldn’t wait to get back and have our Test Kitchen make some of these spuds so we could share them with you.
Talking about teams, we actually went to Bronco Stadium, the home of the blue turf to visit where the new Famous Idaho Potato Bowl championship game is going to be played in December. We actually tossed the ball around a bit as well as a few…you guess it…Idaho potatoes.
Let me tell you, it was freezing out there but we had a ball all the same. As we were leaving it just began to snow! How pretty was that?
Alright, enough chit chat, let me share with you two recipes that really stood out from our visit. Let me know what you think, but my guess is both of these will have you saying “OOH IT’S SO GOOD!!®“
Both of these recipes would make grand additions to your Thanksgiving feast. We just had to add them to our brand-new Thanksgiving eCookbook. The smashed potatoes are really something special and a nice change if you’re bored with regular mashed potatoes. And these potato spinach balls sure would make a tasty appetizer.
