
Happy August! Can you believe we’ve already reached back-to-school season? Fall is my absolute favorite time of year. I love watching the leaves change color, grabbing my favorite light jacket and taking a stroll around the block, and finding the crunchiest leaves to step on. Plus, with this heat wave we’ve experienced all summer, I’m more than ready for this humidity to finally go away.

My favorite dish that mixes both my love of veggies and marshmallows (don’t be frightened) is my mom’s Thanksgiving sweet potatoes. She bakes sweet potatoes in the oven and when they are just about ready she puts the marshmallows generously on top and cooks them until they are golden brown. Perfect for Thanksgiving or any chilly Fall evening dinner. Just make the same rule I have in my house: no eating the marshmallows off the top, if you want the delicious golden brown morsels of marshmallows, the sweet potatoes are a packaged deal, you have to have some of both!

I had no idea something like PB&M even existed, but I’m glad it does! I hope some chilly weather blows its way over soon, because I’m thrilled to try out some of these on a blustery night. It’ll be like adding a new culinary staple to my cold-weather pantry: loose-leaf tea, tons of apples, and now, marshmallows!

We recommend checking your grocery store for gluten-free graham cracker options which should be a big help on a few of these recipes. Many stores also have some great gluten-free baking products such as flour and bread that you can easily substitute in.
