
One lesson I have learned in all my years of cooking: When life gives you lemons, make lemonade. So I guess that means when life gives you overripe bananas, you should make banana bread, right? In my book, of course that’s right.
Whenever I have a few bananas that are past their prime, I throw them in the freezer and when I have enough, I thaw them and whip up a batch. And that batch is usually studded with chocolate chips.
Also keep in mind that there are no rules when it comes to the shape. Instead of using the traditional loaf pan, bake your batter off in muffin pans, just make sure you reduce your baking time.

That’s right, you can choose anything from muffins to banana bread made with applesauce…even cookies. The one-pan version has nuts, but you can really add ‘em to any recipe if you like. So whether you prefer nuts in yours or not, banana bread is one one of those desserts that I’m always nuts over. Period.


Bananas are HEALTHIER for you than apples. SERIOUSLY. The apple ‘thang’ just sounds better.
