Like most people, I keep a few store-bought salad dressings in the fridge. As a marinade or a quick veggie dip, they’re good in a pinch. But they’re not exactly my preference: the low-fat or low-calorie salad dressings are usually low on taste, and the regular versions are high in fat and full of artificial ingredients. Homemade Deli Salads for Dinner? Yes!

As a kid, one of the biggest joys at dinnertime is eating things you’re not “supposed to.” Pancakes for dinner? Waffles after dark? Having breakfast for dinner made you feel like you were breaking the rules – and when it’s parent-approved, all the more reason to indulge!

Even as an adult, it’s still hard to shake that feeling I’m doing something “bad” when I don’t eat traditional fare for dinner. But this collection of 56 Divine Deli Salad Recipes is giving me new reason to make homemade deli salads for dinner – and enjoy every minute of it! Whether it’s a huge bowl of Curried Chicken Salad or a heaping serving of Artichoke and Shrimp Pasta Salad, it has been a delicious undertaking. After all, who can resist deli-style salads? Chicken salad recipes, pasta salad recipes, potato salad recipes, and coleslaw recipes are year-round favorites…but sometimes you have to think outside of the picnic/potluck box.

Chicken salads and pasta salads make the best dinners because the multiple ingredients are super filling. Autumn Chicken Salad, for example, is packed with apples, chicken, pecans and grapes for sweet/savory combination that will leave you satisfied, plus it’s so easy to throw together quickly. The Orzo and Pea Salad is another great dinner idea – it’s a lovely change of pace from traditional cold pasta salads, and uses garden-fresh herbs like parsley, basil and mint.

But if you were thinking I wouldn’t make an entire dinner out of potato salad, think again! (Just don’t tell my mom.) Potato salad is my absolute favorite deli salad and while I would love to eat it every single night for dinner, I’m not sure my cholesterol would agree! When deciding which potato salad recipes would be best for my uh, “experiment,” I tried to find those that include ingredients potatoes and mayonnaise, whether it’s vegetables or protein. “Pumped Up” Potato Salad is full of tuna, red bell pepper, scallions and celery so I’m getting a good mix of flavors and textures. (I also ate True Blue Potato Salad for dinner, because blue cheese makes an absolutely extraordinary main dish!)

You may have noticed that strawberries are just everywhere right now – and for good reason! These sweet, red berries are at their peak, and I made sure to buy a whole bunch of ‘em on my last trip to the market this past weekend. Some of them were just huge; they reminded me of the ones I used to get for my catering business in Albany – everyone always said I had the biggest strawberries they’d ever seen. I used to serve them with all sorts of fondue for tasty dipping – good stuff!

Another great memory strawberries bring to mind is the wonderful compote my mom used to make when I was a boy. I remember watching her in the kitchen, as she’d cook down all of those fresh berries and rhubarb in that giant pot of hers – I remember thinking the rhubarb looked like red celery! We’d put that compote on just about everything, from ice cream to pancakes, and boy was it good.

But that’s not all – one of the many reasons I love strawberries is because they’re so darn versatile! You can put ‘em on everything from spinach salads to your favorite dessert. I sure have seen a lot of strawberry shortcakes coming out of our Test Kitchen this season…

I bet you’re wondering what I decided to make with all those strawberries I bought over the weekend. Well, I wrapped up some of them real tight and put ‘em in the freezer – this way, I can have smoothies for breakfast for months to come.

Strawberry Rhubarb Cobbler  RE Strawberries: Get ‘Em While They’re Great!

The rest I decided to use for this Strawberry Rhubarb Cobbler, just so I could remember a taste of mom’s old compote. It sure tasted close, though nothing’s ever as good as when mom used to make it, right? I’ve been eating up this tasty dessert all week long – I even had some for breakfast with a little yogurt on the side! Who says cobblers are just for fall? Not I. With fresh or frozen strawberries, you can have cobbler or smoothies all year ‘round, because… “OOH IT’S SO GOOD!!”

I admit it without shame: I take every cooking shortcut known to man. Repurposing leftovers, ingredient substitutions, packaged mixes or jarred sauces wherever possible, using the microwave a little too frequently…anything to simplify the recipe and (hopefully) shave off a bit of prep time. Sometimes that means an easy one-pot dinner or five-minute chicken meal; sometimes I completely indulge my sloth tendencies and cave to the temptation of takeout!

Even though I like to cut corners with recipes, especially when I’m short on time and patience, I still want it to seem like I spent hours in the kitchen while my guests ooh and ahh over my beautiful-looking and delicious-tasting meal. Occasionally, I feel a twinge of guilt that I’m not attempting these elaborate restaurant-worthy recipes, but ultimately, the simple yet tasty philosophy works best for me. Call me lazy, but I have plenty of company!

In The Lazy Gourmet: Magnificent Meals Made Easy, authors Robin Donovan and Juliana Gallin have packed their cookbook with 125 easy recipes that easily disprove the assumption that preparing an elegant meal requires spending hours in the kitchen! Among their words of wisdom is a saying I’d love to hang on a plaque in my kitchen: “Cooking a great meal can be just as easy as cooking a crappy meal!”

The Lazy Gourmet is a great companion for any novice home chef, but even the most skilled cooks will appreciate the fresh, seasonal dishes that can pass for both sophisticated party fare and family-approved last-minute dinners. Donovan and Gallin devote Part I to The Basics: cooking tips for experienced and inexperienced cooks, culinary tools that are essential to Lazy cooking, and the key ingredients in a well-stocked pantry. These include over 30 kitchen staples to keep on hand to help transform a normally mundane recipe. I was happy to discover that cheese is one of the most important items on this list – and not just one cheese, but blue, chevre, feta, marscapone, and hard cheese like Parmesan and Pecorino. Cheese is ALWAYS in my fridge!

Part II jumps right in: the recipes, divided in to Snacks and Starters, Salads, Soups, Sandwiches, Small Plates and Main Dishes, Sides, Condiments, Sauces and Extras, and Desserts. What I found incredibly useful about the range of recipes in this cookbook is that you could pick one recipe to build dinner around (Chicken with Lemon and Olives, for example) or plan an entire dinner party using Lazy Gourmet recipes. Suggested menu pairings make it even easier to put together a cohesive, elegant meal for friends and family, plus the authors offer ideas for changing recipes to suit your tastes. Many of these recipes – even those in the Small Plates and Main Dishes section – are great for sharing, so if you’re cooking for a crowd in the near future, try a variety and serve them as small plate options. The Snacks and Starters section has plenty of creative appetizer ideas, including Basil Leaf and Goat Cheese Wraps, an unbelievably simple appetizer that lets your guests do all the work!

Recipe: Basil Leaf and Goat Cheese Wraps

Ingredients

  1. 30-40 big, fresh-looking basil leaves
  2. 5 ounces chevre
  3. 1 dry pint (30-40) cherry tomatoes
  4. 1/2 cup toasted pine nuts

Instructions

  1. Place basil leaves on a serving platter.
  2. Serve the cheese, tomatoes, and pine nuts in small serving dishes, with a spreading knife for the cheese and a small spook for the pine nuts.
  3. Direct diners to take a basil leaf and wrap it around some cheese, a tomato, and a couple of pine nuts.

Imagine your favorite food in the whole, wide world. Now, imagine that you had a seemingly endless supply right in front of you, and you could take as much or as many as you wanted – all for free! Sure sounds crazy, doesn’t it? It’s exactly what happened to me the other day when I visited Bedner’s Farm Fresh Market, one of my favorite local farms here in South Florida. Because it’s the end of tomato season here, the farmers told us we could pick as many tomatoes as we wanted, all for free!

Now, this farmer’s market has all kinds of healthy, fresh produce that I love to eat, but it’s no secret that tomatoes are my all-time favorite. When we got there, I was excited to see rows and rows of tomatoes as far as the eye could see. The vines were absolutely loaded with plump, juicy, bright red tomatoes, and as I rode in on the tractor, I thought I might have been dreaming. I brought Patty, the Director of my Test Kitchen, with me that day; we looked at each other and knew we were in for quite a treat!

The friendly farmers told us that we also had the option of heading over to the strawberry fields, but I had my mind set on those tomatoes. They gave us plastic grocery bags, and put us off to work, picking as many tomatoes as our hearts desired. It brought a smile to my face to see so many families and children having so much fun choosing the very best tomatoes to bring home to their loved ones!

Howard, who heads up day-to-day operations for us, also came with us, and boy was I glad! We needed all the help we could get to carry all of those tomatoes back with us. The three of us struggled back to the tractor with bags and bags of tomatoes. We even played a fun little game on the ride back where we all guessed how many tomatoes we’d each picked. None of us came close to guessing that we’d picked 100 pounds of tomatoes that day! That’s right, we weighed them back at the Mr. Food kitchen, and we couldn’t believe our eyes when that scale reached triple-digits. Holy tomatoes!

We picked up plenty of fresh basil from the farm, too – we knew we’d need it for all of the delicious tomato-mozzarella salads we’d be making! Hey, we could also use some of that basil to top these wonderful fresh tomato flatbreads for a fun twist on pizza night. And as excited as I was to make hundreds and hundreds of my favorite tomato sandwiches, what I was really looking forward to was getting back home so that I could share my tomatoes with my family, neighbors, and team at the Mr. Food office.

Even though tomato season is over here in South Florida, for many of you up north, it’s just beginning! Be sure to look out for those delicious fresh tomatoes in your area soon, because there’s just nothing like a fresh-picked tomato…“OOH IT’S SO GOOD!!”
