I love Thanksgiving! It’s one of the holidays we host at our house and it’s by far my favorite! We’ve been hosting it for more than 20 years, and over the years I’ve collected special table linens that I like to use, and pretty decorations to make the tables festive. For Thanksgiving, the way the tables look is almost as important to me as the food. ALMOST.  

The food. Mmmm. My mouth is watering just thinking about all the yummy dishes. My menu has been almost the same since the very first year. Many of the dishes we have, I only make for Thanksgiving, so they’re really a treat. They’re our traditions. My guests look forward to the same food they’ve always had.  

A few years ago, I found a new sweet potato recipe that I wanted to try. I had been making a traditional sweet potato casserole, with the mini marshmallows on top, for years. This new recipe was for roasted sweet potato wedges, and sounded much healthier, but still sounded delicious. Well, I thought about just substituting the new recipe for the old one. I even mentioned it, in passing, to a few of my guests. Everyone’s response was “You can’t stop making the casserole!” So, that year, I decided to make both and let them choose which one they liked better. I wasn’t surprised when everyone unanimously picked the new recipe! It’s now a favorite, and a new tradition.  

Last year, I decided we needed a new green vegetable to replace the traditional green bean casserole. As I always do, I turned to the Mr. Food website and found our next new tradition…Holiday Green Beans. This recipe is so quick and easy, and it’s delicious. (Not to mention much lighter and healthier than the green bean casserole I had been making for years!) And none of my guests put up a fight.

This year, I’m adding a new dessert because there’s a recipe on the Mr. Food website that my kids love. It’s Cheesecake Filled Cupcakes, and they’re to-die-for! I know they’re not a typical Thanksgiving dessert, but I’m making them in addition to the apple pie and pecan pie.  

So, now I know that I can make minor changes to my menu, but gradually! How about you? Have you changed your menu? Let me know, and in the meantime, I wish all of you a happy Turkey Day!

The True Meaning of Thanksgiving

With Thanksgiving less than a week away, most of us are getting excited. As for me, I love that this is the big kick-off to the holidays. Many of us can’t wait for the 4-day weekend, the lazy days curled up on the couch watching football while chowing down on a big overstuffed turkey sandwich made from leftovers. I know my neighbors are already strategizing over which stores they’ll attack first in the wee hours on Black Friday. 
 
I’m looking forward to all the hoopla that comes with the holiday, however the thing that I’m looking forward to the most next weekend is being able help those in need. You see, my wife Patty and I run the kitchen at a local church that feeds those who aren’t as fortunate as many of us. Last year, we helped serve over 1500 people on Thanksgiving Day. And what is so surprising is that we aren’t feeding just the homeless. The lines are made up of moms and dads and kids and seniors who simply just don’t have the money to put a Thanksgiving meal on the table. Let me tell you that in the last couple of years, with so many people out of work, the number of mouths to feed way outgrew the unemployment rate.
 
Having been in the food industry since I was “knee-high to a grasshopper,” I just love the feeling of helping out. Last year, we (when I say “we,” I mean a team of about 50 volunteers) carved over 100 turkeys, made hundreds of pounds of stuffing, sweet potatoes, mashed potatoes, veggies and enough gravy to fill several bathtubs. That’s not to mention the hundreds of pies, cakes and such that added a sweet ending to everyone’s meal.
 
Is it a lot of work? You bet. Does it mean that my family eats later on Thanksgiving than we would like? Yes, but let me tell you that when we do finally sit down to dinner, and before we eat, we go around the table and all share at least one thing that we are thankful for. At that point, all I have to do is look up at my family and friends…in my house with a feast of food on the table after spending all day helping those less fortunate, and a tear of joy comes to my eye as I realize just how fortunate I am. To me, this is what the holidays are all about.
 
If you haven’t experienced this feeling, let me tell you it’s amazing. Don’t know where to start? Maybe volunteer at a food bank or as a server at a local food kitchen, or gather up some canned items and bring them to a local food pantry. Appetizers to Satisfy Hungry Thanksgiving Guests

Potato Puffs RE Appetizers to Satisfy Hungry Thanksgiving Guests

Mr. Food's Potato Puffs are the perfect appetizer, with their crunchy golden crust and soft potato insides! Everybody loves them!

 

Thanksgiving is, by far, my favorite holiday. It’s about the time of year, the season, family, friends, food – I love it all! Between my family and my husband’s family, we alternate hosting every year. 

When it rolls around to our turn, I kick into planning mode. I make lists, I research new recipes, and I make more lists. My husband laughs at me because of my lists, but it helps me stay organized. The actual Thanksgiving meal is easy for me. The challenge is keeping everyone out of the kitchen and busy while I prepare dinner. At our house, we don’t eat until late on Thanksgiving Day, so I need quick, easy appetizers to hold everyone over while they’re watching football. My all-time fave at this time of year is Cranberry Pecan Brie. I will make this one several times before the season is over. 

Then there are Potato Puffs. They’re so simple and no one ever turns them down. I also like to put out a bowl of some type of nuts. Instead of the boring can of mixed nuts, try Mr. Food’s Snackin’ Pecans.  

The other appetizer I make nearly every year, even if I am not hosting, is stuffed mushrooms. Last year I tried Golden Stuffed Mushrooms and they were delicious! 

Although I enjoy trying new recipes and cooking for my family and friends, in the end, it really doesn’t matter what we eat. What matters is being together and enjoying each other’s company. Watching the kids grow from year to year and playing together. We have a tradition in our home where we go around the table and each person gets a chance to share what they are thankful for. It may sound kind of corny, but if you’ve never done it, try it this year. You’ll be pleasantly surprised what people will say. Happy Thanksgiving!
