Okay, so I’m not THAT old, but over the last few years I’ve been teaching myself to like certain healthy foods I never liked before.

First it was sweet potatoes. Can you believe I never ate them growing up? Neither of my parents cared for them, so therefore I was never exposed to them. Several years ago, I started hearing about how healthy they were, and I was determined to learn to like them. I’ll admit…it wasn’t that difficult! Now I love sweet potatoes…mashed, baked, fried and even shredded. I especially love the Mr. Food recipe for Shredded Sweet Potatoes! (oh, and just for the record, my parents both love them now, too!)

I admit it without shame: I take every cooking shortcut known to man. Repurposing leftovers, ingredient substitutions, packaged mixes or jarred sauces wherever possible, using the microwave a little too frequently…anything to simplify the recipe and (hopefully) shave off a bit of prep time. Sometimes that means an easy one-pot dinner or five-minute chicken meal; sometimes I completely indulge my sloth tendencies and cave to the temptation of takeout!

Even though I like to cut corners with recipes, especially when I’m short on time and patience, I still want it to seem like I spent hours in the kitchen while my guests ooh and ahh over my beautiful-looking and delicious-tasting meal. Occasionally, I feel a twinge of guilt that I’m not attempting these elaborate restaurant-worthy recipes, but ultimately, the simple yet tasty philosophy works best for me. Call me lazy, but I have plenty of company!

In The Lazy Gourmet: Magnificent Meals Made Easy, authors Robin Donovan and Juliana Gallin have packed their cookbook with 125 easy recipes that easily disprove the assumption that preparing an elegant meal requires spending hours in the kitchen! Among their words of wisdom is a saying I’d love to hang on a plaque in my kitchen: “Cooking a great meal can be just as easy as cooking a crappy meal!”

110502LazyGourmet The Lazy Gourmet, or How to Succeed at Cooking Without Really Trying

The Lazy Gourmet is a great companion for any novice home chef, but even the most skilled cooks will appreciate the fresh, seasonal dishes that can pass for both sophisticated party fare and family-approved last-minute dinners. Donovan and Gallin devote Part I to The Basics: cooking tips for experienced and inexperienced cooks, culinary tools that are essential to Lazy cooking, and the key ingredients in a well-stocked pantry. These include over 30 kitchen staples to keep on hand to help transform a normally mundane recipe. I was happy to discover that cheese is one of the most important items on this list – and not just one cheese, but blue, chevre, feta, marscapone, and hard cheese like Parmesan and Pecorino. Cheese is ALWAYS in my fridge!

Part II jumps right in: the recipes, divided in to Snacks and Starters, Salads, Soups, Sandwiches, Small Plates and Main Dishes, Sides, Condiments, Sauces and Extras, and Desserts. What I found incredibly useful about the range of recipes in this cookbook is that you could pick one recipe to build dinner around (Chicken with Lemon and Olives, for example) or plan an entire dinner party using Lazy Gourmet recipes. Suggested menu pairings make it even easier to put together a cohesive, elegant meal for friends and family, plus the authors offer ideas for changing recipes to suit your tastes. Many of these recipes – even those in the Small Plates and Main Dishes section – are great for sharing, so if you’re cooking for a crowd in the near future, try a variety and serve them as small plate options. The Snacks and Starters section has plenty of creative appetizer ideas, including Basil Leaf and Goat Cheese Wraps, an unbelievably simple appetizer that lets your guests do all the work!

Recipe: Basil Leaf and Goat Cheese Wraps

Ingredients

  1. 30-40 big, fresh-looking basil leaves
  2. 5 ounces chevre
  3. 1 dry pint (30-40) cherry tomatoes
  4. 1/2 cup toasted pine nuts

Instructions

  1. Place basil leaves on a serving platter.
  2. Serve the cheese, tomatoes, and pine nuts in small serving dishes, with a spreading knife for the cheese and a small spook for the pine nuts.
  3. Direct diners to take a basil leaf and wrap it around some cheese, a tomato, and a couple of pine nuts.

Quick Notes

Makes 30 – 40 wraps.

Four ingredients, three steps – how deliciously lazy! For more recipes, articles, and interviews about the book, don’t miss The Lazy Gourmet blog tour:

Spring Has Sprung! Top 10 Spring Recipes

Wednesday, March 23rd, 2011

Winter wears out its welcome by mid-January. This is usually the point when I am exasperated with plunging temps, pricey heating bills, heavy overcoats, sidewalks that aren’t shoveled, my winter wardrobe…pretty much anything annoys me in the dead of winter.

But then there’s that first sign of spring – weather- or calendar-related, I don’t care – and almost immediately, my spirits lift thinking about the warm weather and green grass ahead. Another reason I look forward to spring is the abundance of produce in season! Green peas, asparagus and artichokes are at their peak, while rhubarb, strawberries and pineapples are fragrant springtime favorites.

Minty Pea Salad RE Spring Has Sprung! Top 10 Spring Recipes

Here’s a top 10 list of my favorite Mr. Food spring recipes:

  1. Asparagus Parmigiana – A great way to utilize fresh-as-spring asparagus, this cheesy veggie dish may make even your most finicky eaters new fans.
  2. Minty Pea Salad – A fresh idea for salad sides, this minty dish blends in-season green peas, Dijon mustard, mayo, sour cream and fresh mint.
  3. Spring Flower Cupcakes – Bring these adorable cupcakes to your spring events (showers, weddings, graduations) – the mini candies on top will be a hit!
  4. Strawberry Spinach Salad – This nutrition-packed salad incorporates fresh strawberries and makes a colorful lunch or dinner side.
  5. Stuffed Artichokes – You won’t believe how simple it is to make restaurant-style stuffed artichokes at home. These tasty artichokes are fun to eat, too!
  6. Mint Roasted Leg of Lamb – A traditional main course for Easter is leg of lamb. With it being so easy to roast (and often on sale!), you can enjoy lamb all spring long.
  7. Spring Vegetable Couscous – Try this Middle Eastern variation on pasta primavera as a main dish or a side. It features spring vegetables but you can add whatever!
  8. Lemon Dill Chicken – Weather-permitting, Fresh Lemon Dill Chicken is great on the grill! It is on top of our list of backyard yard grill picks.
  9. Pineapple Baked Ham – Often served at Easter, this ham gets its sweetness from a pineapple and brown sugar glaze!
  10. Bloomin’ Cupcakes – These devil’s food cupcakes look fancy but you can make them for a fraction of the cost as purchasing at a bakery.

Would You Like Mayonnaise with Those Fries?

Wednesday, February 9th, 2011

SoBe Winning Fries 05 14 09 RE Would You Like Mayonnaise with Those Fries?

You're gonna be hooked once you try these Winning Fries!

By Helayne Rosenblum, Mr. Food Senior Writer

I’m picky about French fries. They’ve got to be really crispy, not soggy. I prefer thick-cut fries and, even though I know it’s not good to overdo it, I like ’em salty.

Okay, I’m particular. Growing up in New York City, I had to take a city bus to school, and that’s how I found the perfect fries. The afternoon bus stop was in front of a restaurant that sold my “dream fries” in a paper container from a take-out window! My girlfriends and I usually splurged at least once a week and shared an afternoon snack of fries with lots of ketchup. I can almost taste them now!

Years later, while in Amsterdam, Holland, I was in heaven when I got a taste of their version of fries, known as frites. They sell them all over in little French fry specialty shacks, in the city and in small villages outside the city where windmills are still in use. It’s a magical memory for me.

The thing that intrigued me about the Dutch fries is that these hot-and- crispy-on-the-outside, perfect-on-the-inside fries are served with a generous dollop of a special, unbelievably creamy mayo that has a slightly different flavor than anything we can buy in a jar here in the U.S. It’s a homemade taste. At first I was skeptical about having fries with mayo but, once I tried them, I was eating frites every chance I got…stopping at little shops up and down the Damrak and in Central Station…everywhere we went. It’s a good thing we didn’t spend more than a few days in Amsterdam before heading to some other equally food-tempting cities. If I kept up my fries-frenzy, I would have had to buy bigger clothes to get home!

Here at home, it’s not the same to have fries with store-bought mayonnaise, so I’m going to savor that tasty memory and try to get back to Amsterdam again, as it’s truly one of my favorite European cities. Luckily, I’ve learned some great tricks to making awesome American-style fries with fun toppings, thanks to recipes our Mr. Food Test Kitchen has come up with, like our Cheesy Burger Fries, and these Winning Fries that were shared with us not long ago. Plus, on a recent Mr. Food show, we shared a twist on fries that are perfect for casual entertaining. Lighter than traditional wings, our Buffalo Potato Wedges are a nice option.  And if that’s not enough for all you potato lovers, check out this site for lots of super potato recipe ideas: http://www.idahopotato.com.

As for the mayonnaise issue, I don’t think I could duplicate that Dutch mayo…I’d rather go back to Holland and enjoy it there.
