Whether you have a summer vacation planned, or you’re just making the transition from sweaters to tank tops, chances are you wouldn’t mind adding a few lighter recipes into your current rotation.

I know I wouldn’t!

And with Memorial Day, 4th of July, and countless summer parties around the corner, the world of appetizers and munchies is probably a good place to start.

Classic dip recipes are a summer favorite – I mean, when was the last time you went to a BBQ or other summer gathering and you didn’t see one of those seven-layer Mexican dips with the beans, sour cream, and cheese … or a creamy onion dip sitting next to a bowl of potato chips? Perhaps the better question is: When was the last time you were able to resist ‘em?

And that means shedding off those winter clothes, and preparing for some sunny high temperatures! It also means spring-cleaning, and that’s just what I did this weekend…out with the old and in with the new!

In addition to maybe re-arranging some furniture or getting a new bedspread to spruce things up a bit, it also means eating lighter to help us get into some really cute clothes for the summer.

In the midst of all my spring-cleaning, it was time for a nice and refreshing smoothie to keep me going. I took a look at what shakes we have here at the Test Kitchen, and I found a bunch of delicious options.

Speaking of the new year, it’s about time you checked in on your New Year’s Resolutions.

Every year, my resolutions stay strong for about three weeks. That’s followed by about a week of guilt, and by the time February rolls around, I’ve determined that I’m too busy right now to follow through. I’ll get around to it all once life slows down. It’s funny how that magic window of time never quite appears. Spring pops up, and I still haven’t started to eat healthier, take more pictures, get in touch with old friends, or take up a new hobby. Does any of this sound familiar?

That’s why March is the perfect time for a resolution renewal–New Year’s 2.0, if you will. Take those nutritional goals you and your friends toasted over, dust them off, and head out again for round two. We’re here to help!

My favorite secret ingredient is a must inthis dish...

Patty Rosenthal From the Test Kitchen: Cooking Secrets Meant to Be SharedWhen I was growing up I was taught that a secret is a secret and you never share it, pinky-swear.  When my best friend told me she had a crush on the boy down the street and made me triple-promise not to say anything to anyone, to this day I have never broken that promise.

But growing older I learned that it’s okay to share a secret once in awhile. When you get blamed for eating the last cookie and it was your brother who took the last cookie from the cookie jar, or who sipped the milk right out of the carton.

I run the Test Kitchen here at Mr. Food, and think it’s okay to share some of our kitchen secrets. Secrets like, how to tell if your baking powder is still fresh before you use it, so that you don’t have to throw out your cake when it doesn’t rise. Secrets like that are meant to be shared.

Okay, so I’m not THAT old, but over the last few years I’ve been teaching myself to like certain healthy foods I never liked before.

First it was sweet potatoes. Can you believe I never ate them growing up? Neither of my parents cared for them, so therefore I was never exposed to them. Several years ago, I started hearing about how healthy they were, and I was determined to learn to like them. I’ll admit…it wasn’t that difficult! Now I love sweet potatoes…mashed, baked, fried and even shredded. I especially love the Mr. Food recipe for Shredded Sweet Potatoes! (oh, and just for the record, my parents both love them now, too!)

Hubby and I are on board – no problem. The baby is now a year old and still very happy eating whatever I put in front of her: sweet potatoes, lean proteins, avocado and squash. Then there is our 12-year old…more of a challenge.

We have a rule in our house; the kitchen is not a restaurant and I am not a short-order cook. I will make dinner and you will eat it. We try to involve him in planning the meals for the week and this way he has more of an interest. We can’t have hamburgers, tacos and pizza every night. I figured there have to be lighter, healthier versions of these kid-friendly foods out there.

Wrong! Enter our latest collection of 30 Healthy Recipes for Comfort Foods.  I got with our Test Kitchen and we put this collection together to prove that dieting and eating healthier doesn’t have to mean giving up on our favorite feel-good dishes.

I have to admit, I was skeptical of recipes like our Not Fried “Fried” Chicken. When we tested these recipes, that was one that I was especially excited to try. Would it be crispy and crunchy – the way fried chicken is supposed to taste? Would it be juicy and flavorful?
