Fall is my absolute favorite time of year. I love watching the leaves change color, grabbing my favorite light jacket and taking a stroll around the block, and finding the crunchiest leaves to step on. Plus, with this heat wave we’ve experienced all summer, I’m more than ready for this humidity to finally go away.

I’m sure all of you are ready for weather worthy of snuggling under a blanket and warming up by a fire with a stick and a bag full of marshmallows. Marshmallow treats are all over the web, and all of us at the Mr. Food Test Kitchen want to help you make the most of this addicting campfire standard.

That’s right—we’re talking individual cake recipes you can have ready in 5 minutes or less. Perfect for those times when you’re craving something sweet, but you also know it’d be a bad idea to make an entire batch of brownies for just yourself.

The funny thing about this new trend is that we’ve had a recipe for Fudgy “Cup” Cakes for many years! Our version uses shortcut ingredients like cake mix and pudding mix, which makes it even easier—but my favorite part about this recipe is the suggestion to use this idea for gifts. You can divide individual portions into little plastic baggies, and then stick them inside cute coffee mugs (microwave-safe, of course) and give them as gifts! I don’t know about you, but I think this is pretty dang adorable.

I’m sure you, like me, have your own personal favorites when it comes to fruit desserts. I, for one, can never turn down desserts with strawberries, especially if whipped cream is involved. If you’re not familiar with the dietary rules of the holiday, there are many foods that can’t be eaten during the eight days it lasts. Generally, some of the basics that aren’t allowed are bread, rice, wheat, rye, oats, barley, pasta, corn, peas, beans, peanuts, and foods made with these items. Observant Jews do not even keep these items in their homes during the holiday.

So what is allowed? Fruit is always a safe bet, as are potatoes and other root vegetables, leafy greens, nuts, eggs, fish, dairy and meat (although, in accordance with Kosher laws, meat and dairy must be served separately).

Typically, Passover baked goods are dry, heavy and not very appealing because you can’t use flour. A few years ago, I found a recipe for Passover Brownies that my family absolutely loves, so I’ve shared it with you below. (In fact, my kids have been known to ask me to make them at other times during the year!) They are surprisingly moist and really good!
