I love to use the least number of pots, pans and dishes whenever possible, so one-pot meals and me are a match made in heaven. Try these 36 Quick and Easy One-Pot Meals on for size! In the foodie world, you’ll see many different interpretations of one-pot meals…so what exactly qualifies a “one-dish recipe”?

Savory Short Ribs 09 25 09 RE One Pot Meals: Less Pots in Your Sink & More Time in Your Day

For me, it’s very simple: if there’s less pots in my sink and more time in my day, a dish likely qualifies as a one-pot meal. More specifically, the entire meal – vegetables, starch, and meat (if included) – comes to the table in a single pot, skillet, bowl, or dish. There are a lot of “one-dish meals” that can be prepared with only one pot, pan, skillet, slow-cooker, etc., but my bottom line is how the meal is served: in just ONE dish.

Other things I look for in one-pot meals is minimal prep time that is also pretty basic (chopping a green pepper or sauteing chicken, for example). And one-pot dishes are the star of the show: no additional side dishes, breads, rice, or salad is necessary.

My absolute favorite one-dish recipe to make is One Pot Couscous with Moroccan-style lamb. The tiny pearls of couscous make a wonderful complement to the flavorful lamb chunks. Plus, it’s packed with vegetables…but there’s no chopping veggies involved! Just add a bag of frozen mixed vegetables, and this stew pretty much makes itself. The other great thing about One Pot Couscous is the leftovers are fantastic – I make some at the beginning of the week and had lunch for the next three days!

Ingredients
  • 2 to 2-1/2 pounds lamb stew meat or boneless leg of lamb, cut into 1-inch chunks
  • 1 medium-sized onion, coarsely chopped
  • 3 garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 3/4 cups beef broth
  • 1 (16-ounce) package frozen mixed vegetables
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (10-ounce) package couscous

How to Resist the Temptation of Takeout

Here’s what helps me resist the temptation of takeout: make my favorite Chinese takeout recipes at home! Not only is this a huge money-saver, I can easily make the best Chinese recipes quickly and simply without losing any of the amazing flavor. It’s no secret a main requirement for any meal I cook is that it be fast and easy. So you can imagine how often I hit the easy button by ordering takeout. And as if takeout couldn’t get any easier, now there’s sites like GrubHub.com and Delivery.com that allow you to order online from tons of  restaurant menus in your area – and opt for delivery straight to your door (for a fee and/or minimum order price). So….you can imagine how often I upgrade my laziness from takeout to delivery.

But with this list of 26 Takeout Dishes to Make at Home, I don’t have any excuses about how “fast” and “easy” takeout is! Plus, all the best Chinese takeout recipes are there. My absolute favorite is Sweet and Sour Chicken. I admit, I was skeptical that a home version could taste as perfectly tangy as my favorite takeout place. But the sweetness of the honey combined with the fresh vegetables and soy sauce was a fantastic treat. Personally, I like a lot of pineapple in my Sweet and Sour Chicken. Usually, Chinese restaurants don’t share my preference. But making it for myself, I was free to add as much pineapple as I wanted! (This dish would be more appropriately called Sweet and Sour Pineapple with Chicken.)

Between prep and cooking, this meal was done in under 15 minutes. With takeout, I can sometimes wait an hour or more for an order, a the best part – the sweet and sour sauce -  is more of a glaze-y goo by the time it arrives at my apartment. This is one recipe I know I will make again and again. For all the money I’m saving on ordering out, I don’t even mind springing for a box of almond cookies to go along with my at-home “takeout” dinner!

The old Dean Martin classic goes: “When the stars make you drool just like a pasta fazool, that’s amore!” Most of us don’t need to be hit in the eye with a pizza pie to see how intertwined food and love are in Italian culture. It also doesn’t take much convincing to polish off a bowl of spaghetti and meatballs or chicken parmigiana!

Italian food is loved everywhere because it is comfort food at its finest – it tastes like there’s love and tradition in each bite. It’s also easy to cook – you can recreate old world recipes pretty faithfully without much cooking experience. One of the first things I learned to make for myself was pasta – it’s still one of my favorite dinners. Give me a bucket of Parmesan cheese and I’m set! (The serving below is about 1/8 of what I normally use!)

Spring Has Sprung! Top 10 Spring Recipes

Winter wears out its welcome by mid-January. This is usually the point when I am exasperated with plunging temps, pricey heating bills, heavy overcoats, sidewalks that aren’t shoveled, my winter wardrobe…pretty much anything annoys me in the dead of winter.

But then there’s that first sign of spring – weather- or calendar-related, I don’t care – and almost immediately, my spirits lift thinking about the warm weather and green grass ahead. Another reason I look forward to spring is the abundance of produce in season! Green peas, asparagus and artichokes are at their peak, while rhubarb, strawberries and pineapples are fragrant springtime favorites.

Here’s a top 10 list of my favorite Mr. Food spring recipes:

  1. Asparagus Parmigiana – A great way to utilize fresh-as-spring asparagus, this cheesy veggie dish may make even your most finicky eaters new fans.

Chicken Casseroles: Make More & Make’em Last

Is there anything that tastes as home-cooked as a chicken casserole? Appearing on dinner tables coast to coast, chicken casseroles are popular because they’re pretty easy to make, there’s plenty of varieties to choose from, and there’s minimal clean-up thanks to the one-pan simplicity.

But here’s why I love casseroles: I make a bunch of dishes at the same time, then freeze them for future meals. This is perfect for those nights I get home late, or am too lazy to spend hours in the kitchen cooking dinner. To make it even easier, I use disposable aluminum foil pans – that way, I don’t have to let a baking dish sit in the freezer when I might need it for other recipes!

Be sure you let the foil pan cool completely after the casserole is finished cooking, then wrap it securely before freezing. Casseroles will keep in your freezer for up to six months (but I don’t like to wait longer than two or three months).

Quick and Easy Chicken Recipes

After a long day of work, the last thing I want to do  is cook an elaborate gourmet meal. Sometimes I arrive home so ravenous that even a 30-minute meal seems like a lifetime to prepare. Short of hitting the easy button – in the form of a mediocre microwave dinner or a never-satisfying can of soup – I usually turn to my food superhero: chicken.

What makes chicken so amazing? Well, in short, is there anything this wonderbird can’t do? Not only is poultry a lean, healthy source of protein, most chicken dishes are tasty, quick and easy to prepare. It’s almost impossible to feel bored by chicken because of the vast number and variety of recipes available!

Asian Wraps RE Quick and Easy Chicken Recipes

One of my favorites on the list is Artichoke Chicken, which goes from prep to table in under 10 minutes! This dish has the best of both worlds: it’s fast and simple to prepare for yourself, but is also sophisticated enough to serve for dinner guests. Here’s a closer look at our recipe for Artichoke Chicken:

Ingredients
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 boneless, skinless chicken breast halves (1 to 1-1/2 pounds total)
  • 4 tablespoons olive oil
  • 1/3 cup dry white wine
  • 1 (3-ounce) package sun-dried tomatoes, reconstituted according to the package instructions and sliced
  • 1 (14-ounce) can artichoke hearts, drained and quartered
  • 1 lemon, cut in half
Instructions
  1. In a shallow dish, combine the flour, salt and pepper; mix well. Dip the chicken in the flour mixture, coating completely.
  2. Heat the oil in a large skillet over medium-high heat. Add the chicken and sauté for 3 to 4 minutes per side, or until golden. Stir in the wine, sun-dried tomatoes, and artichokes.
  3. Squeeze the lemon over the chicken and cook for 2 to 4 minutes, or until the sauce begins to glaze and no pink remains in the chicken.
