What is the Meaning of Easter Eggs, Anyway?

Thursday, March 29th, 2012

Howard Rosenthal signature What is the Meaning of Easter Eggs, Anyway?Easter Egg Bread 03 18 11 RE What is the Meaning of Easter Eggs, Anyway?Easter is right around the corner and that means it’s time for chocolate bunnies, Aunt Mary’s Easter egg bread and of course … decorated Easter eggs. But depending your upbringing and maybe how old you are, Easter eggs can vary greatly.

I actually was curious about what the significance of the egg was to this holiday. After all, bunnies don’t lay eggs, chickens do – unless something changed since I took high school biology. But after checking out a few sources, and like everything in life, there are many stories … the one that seems to be the most common is that the egg represents “new life”. In the eyes of Christianity, it’s a symbol of resurrection.

Celebrate National Banana Bread Day with 5 Top Recipes

Thursday, February 23rd, 2012

Howard Rosenthal signature Celebrate National Banana Bread Day with 5 Top RecipesChocolate Chip Banana Bread RE 2 Celebrate National Banana Bread Day with 5 Top RecipesOne lesson I have learned in all my years of cooking: When life gives you lemons, make lemonade. So I guess that means when life gives you overripe bananas, you should make banana bread, right? In my book, of course that’s right.

Whenever I have a few bananas that are past their prime, I throw them in the freezer and when I have enough, I thaw them and whip up a batch. And that batch is usually studded with chocolate chips.

Also keep in mind that there are no rules when it comes to the shape. Instead of using the traditional loaf pan, bake your batter off in muffin pans, just make sure you reduce your baking time.

Chili is Better When It’s Chilly: Top 10 Chili Recipes

Friday, January 13th, 2012

Howard Rosenthal signature Chili is Better When Its Chilly: Top 10 Chili RecipesLiving in Florida people often think my wife and I are a bit crazy to go to upstate NY in the middle of the winter to visit family.  C’mon…it’s the holidays and what’s a little, or shall I say a lot, of chilly weather when it come to memory-making times like this?

While there, it seems like all we do is cook and eat and eat some more. It must be something in the air. And unlike in Florida, we obviously found ourselves making recipes that would help warm us up. Making homemade hot chocolate on Christmas morning and after ice skating really hit the spot. But food that seems to bring back the most memories of growing up in this winter wonderland has to be chili.

So one afternoon, my nieces and I made a double batch. Let me tell you – that the house smelled amazing. Sort of brought back memories of the ski lodge that served this when I was in high school. That night at dinner, the chili was a huge hit. Not only did it warm us through and through, it made the whole trip worth it…it was comfort at its best. The chopped jalapenos that I topped mine with really not only warmed me up…it made we break into a Florida sweat. Boy, it was good.

I got our Test Kitchen team together and we put together this list of our top 10 chili recipes. We figure there will be at least one for every taste, whether you like your chili extra-meaty or you want to go vegetarian.

We all have so much on our plates we don’t know where to start first. Yes, we tried this year to get a jump start on everything like we have done in the past but no matter how hard we try…we always wait to the last minute.

Well, let me share a piece of advice so you’re not running to your local grocery store on Christmas Eve to make a dessert because you just ran out of time. Oh, by the way, you’re not alone – and that is why this year the entire Test Kitchen really worked hard to create a bunch of new no-bake dessert recipes. These are desserts that either go together in no-time or can be made in advance and frozen until you’re ready to serve ‘em up.

Howard Rosenthal signature Helping Our Local Church on ThanksgivingThanksgiving Howard RE Helping Our Local Church on ThanksgivingBeing surrounded by lots of great food is nothing new to any of us in the Test Kitchen. We know that is not the same for everyone around the country. Yes, we appreciate that we are blessed.

So as we have been doing for the last 4 years, the Mr. Food Test Kitchen Team once again will be rolling up our chef coat sleeves as we run the kitchen at a local church to feed over 1,200 people who aren’t as fortunate.

For us, this is what Thanksgiving is all about, and we’re thankful to have the opportunity to give back to our community through food, which is what we love most.

Home of the Best Potatoes in the World

Idaho 1855 RE Home of the Best Potatoes in the World

Art & I at Bronco Stadium

Howard Rosenthal signature Home of the Best Potatoes in the WorldIf you love potatoes like I do, I bet you would have loved to tag along as Art and I (a.k.a. Mr. Food) went to Idaho this past week. Yep, Idaho…where the best potatoes in the world are grown. We went as part of our quest to learn more about foods that are grown in the “good ol’ USA.”

While we were there, we went over to the Idaho Potato Commission’s office to find out just what makes their potatoes so unique. And although the answer is really more complex than I want to share here, it all comes down to the rich soil they grow in and the ideal growing climate.
